You always want to put smoked chicken in festive rolls, and boiled fillet goes in those that are prepared for everyday lunches and dinners. Although it is not so spicy in taste, it is much more in line with the criteria for a healthy diet.

And I also like to wrap chicken stuffing in pita rolls because you can combine anything with it: eggs, cheese, any fresh or salted vegetables, canned fruits. It is important that the "minced meat" is juicy, but at the same time does not suffer from an excess of moisture. Lavash, as you know, is made from unleavened dough, and in itself it is still a bit dry. He just needs to get the right portion of “moisturizing” from the filling. Therefore, mayonnaise or some other sauce or vegetable oil is usually added to it.

Ingredients:

  • unleavened Armenian lavash - 1 pack (for 2 sheets);
  • chicken breasts - 2 pcs.;
  • eggs - 4 pcs.;
  • hard cheese - 150 g;
  • cucumber - 1-2 pcs. (depending on size);
  • dill or parsley - 20 g;
  • mayonnaise - 4-5 tbsp. spoons;
  • salt - to taste;
  • ground black pepper - to taste.

Cooking method:

  1. Boil chicken breasts until done. Leave the broth for cooking some other dishes - for example, soups, sauces, aspic, etc., and take out the breasts, let them cool and separate the meat from the bone. You do not need chicken skin - therefore, remove it without regret along with the bones. Grind the boiled fillet - you can simply tear it into small fibers with your hands.
  2. Peel hard-boiled eggs and chop into cubes, as for salad or okroshka. Grind fresh cucumbers in the same way. Combine all ingredients in a bowl, add grated cheese and finely chopped parsley or dill. Salt, pepper, mix, season with mayonnaise. Ideally, of course, at home, since a course has been taken on a healthy diet. Instead of mayonnaise, sometimes the filling is seasoned with olive oil. It’s also delicious, and no one will reproach for “harmfulness”.
  3. Spread sheets of pita bread on a table or on a cutting board. Lay out and level the filling on their surface so that the indents along the edges are about 2-3 cm. Only from one edge can the indent be left wider - up to 6-7 cm. Roll the roll towards this edge. In the same way, you make an analogue from the second sheet of pita bread. Pack both rolls in cling film - each separately, of course. Refrigerate for at least three hours. Before serving, cut into oblique transverse slices.

Lavash rolls with cheese and herbs

Lavash rolls are a snack that has many variations. Here is one of the many types of rolls that my loved ones and I really like.

Ingredients:

  • thin lavash
  • cheese (any kind) - 100-150 gr.
  • fresh cucumber - 1 pc.
  • egg - 2 pcs.
  • mayonnaise
  • some fresh herbs (dill works best)

Cooking:

  1. We put the eggs to boil, while they are preparing, we rub the cheese and cucumber on a grater (I prefer on a coarse grater, this is how you like it).
  2. Mix cheese with a little mayonnaise. And slightly squeeze the cucumber.
  3. Allow the boiled eggs to cool, after which they should be finely chopped.
  4. Now we lay out the lavash on cling film (Armenian lavash is usually large, so I cut it into two parts). We spread all our ingredients on pita bread: cheese, cucumber, eggs, sprinkle with finely chopped herbs.
  5. Then we carefully roll it into a roll and then wrap it in a film in the opposite direction, so the roll has less opportunity to immediately crumble.
  6. And after lying down for some time (10-15 minutes) in cling film, it will go limp and it will be more convenient to cut it.

Lavash roll with fresh herbs

Ingredients:

  • two Armenian lavash;
  • 20 lettuce leaves;
  • 300 ml of mayonnaise;
  • 20 large crab sticks;
  • fresh greens;
  • six eggs;
  • fresh cucumbers - two pieces.

Cooking method:

  1. Rinse cucumbers, greens and lettuce leaves and dry on a napkin. Boil eggs for ten minutes. Peel the garlic cloves and squeeze them into mayonnaise. Mix well.
  2. Unfold pita bread on the table and spread its entire area with a mixture of mayonnaise and garlic.
  3. Cover with lettuce leaves in a single layer.
  4. Defrost the sticks completely, remove the protective shell from them and finely rub them.
  5. Spread the crushed product over lettuce leaves. Make a mayonnaise net on top.
  6. Cover everything with a second pita bread. Spread it with the mayonnaise-garlic mixture as well. Finely grate the boiled eggs and sprinkle the leaf with them, distributing the eggs over the entire surface.
  7. Peel the cucumbers and chop them into strips, trying to make it as thin as possible. Arrange the cucumbers on top of the egg layer.
  8. Finely chop the greens and sprinkle it on top. Now roll everything into a roll, trying to make it as tight as possible. Keep it in the refrigerator for a couple of hours.

Lavash roll with cottage cheese and fresh herbs

Today I want to offer you an excellent universal snack based on cottage cheese in pita bread, which can be served for breakfast or, as a snack, on the festive table. In fact, the filling of this roll can also be used for sandwiches, and it tastes like Almete curd cheese, only more natural and cheaper.

Ingredients:

  • Lavash Armenian (thin): 2 pcs;
  • Cottage cheese (9%): 220 gr;
  • Dill greens: a bunch;
  • Garlic: 2 cloves;
  • Bulgarian sweet pepper: 1 pc;
  • Sour cream (15%): 4 tablespoons;
  • Salt: 1 teaspoon.

Cooking method:

  1. Put cottage cheese in a deep plate or salad bowl. Thoroughly mash it with a fork.
  2. Finely chop the dill greens. Read more:
  3. Combine dill with cottage cheese. Salt, add sour cream and squeeze the garlic. Mix everything properly, taste it - is there enough salt.
  4. Wash the bell pepper, remove the seeds and cut into thin strips.
  5. Spread the first sheet of pita bread, spread it with the curd mixture and lay out the sweet pepper.
  6. Bend the edges of the pita bread.
  7. Do the same with the second layer, which we will put on top of the first.
  8. Carefully roll up a tight pita roll. Wrap it in a bag or foil and put it in the refrigerator for 12 hours so that it is properly soaked.
  9. Cut the finished pita roll with cottage cheese with a sharp knife and serve for breakfast or as a snack on the festive table.

However, if it seems to you that in the morning you will not find time to cook lavash with cheese and herbs, make preliminary preparations in the evening - grate the cheese, mix it with herbs. This is actually the most time-consuming part of the work, and if you do it in the evening, in the morning you will only have to put the pita bread on the pan. You will agree that even the busiest hostess will find time for this.

Ingredients:

2 sheets of thin Armenian lavash;

200 g of hard cheese;

4 tbsp. l. mayonnaise or sour cream (optional);

a huge bunch of greens;

salt, pepper to taste.

Grate hard cheese on a fine grater. You can mix several varieties - I usually make such a breakfast when a piece of Russian, a stub of Dutch, dried gouda slices remains in the refrigerator. All this is perfectly utilized, turning into delicious pita rolls, inside of which cheese stretches with appetizing strings. Just cheese - without reference to varieties.

Finely chop the greens. Taste. Or just what's in the fridge. Or even a freezer - in winter I don’t buy greens for this recipe, I take out dill-parsley harvested from the summer, grown with my own hands.

Mix cheese and herbs. Add salt and pepper if necessary. Season with sour cream or mayonnaise. If we don’t plan to go anywhere, squeeze a couple of cloves of garlic.

The resulting mass is evenly distributed over the entire surface of the pita bread. Roll up rolls. Cut into bite-sized pieces.

Fry in a hot dry frying pan on both sides until golden brown. And immediately, immediately serve, because the cheese stretches with strings, and the greens smell so that you can go crazy, and with a cup of coffee it's just bliss!
