How to cook pumpkin with chicken

Rinse the pumpkin under running water, peel, cut into small cubes. Onion cut into thin slices. Do not chop the onion large, it should have time to bake.

We cut the chicken breast into pieces 1-1.5 cm wide, do not cut it very thinly, because the pumpkin is cooked for a long time. Season it with spices: salt, ground black pepper, turmeric. Put the chicken fillet in a hot frying pan with vegetable oil and fry for about 1 minute on each side. If you want more dietary meat, you can not fry the meat.


Pour water into a bowl, add salt and crushed garlic. It is advisable to pour warm water so that the salt dissolves quickly and the vegetables cook quickly.


Pour the fat from the pan, which remains from the chicken, into the baking dish, then put all the vegetables on the bottom of the dish, and then the meat. Be sure to salt a little and mix so that the salt is evenly distributed. Fill with spicy water, it should cover all the vegetables, then they will quickly cook. Put in the oven for 30 minutes at 180C.

This marinade is also suitable for roasting a whole chicken carcass, but in order for it to bake accurately, I recommend using a baking bag. Pumpkin can be placed both in the middle of the chicken carcass and around it. In addition to vegetable chicken, I used only onions, but you can add potatoes, carrots, prunes, mushrooms, dried apricots, bell peppers, grated cheese to the dish.

Ingredients:

  • Chicken legs - 1 kg.,
  • Pumpkin - 300-400 gr.,
  • Spices - 1 teaspoon,
  • Balsamic vinegar - 3 tbsp. spoons,
  • Apple cider vinegar - 2 tbsp. spoons,
  • Salt - 1 coffee spoon without a slide,
  • Garlic - 3 cloves,
  • Onions - 2 pcs.,
  • Sunflower refined oil - 80-100 ml.

Any parts of the chicken for roasting, whichever you choose, should be checked for the presence of feathers, and then be sure to rinse with cold water. Before marinating, it is advisable to blot the meat with napkins or paper towels. Whole chicken legs, consisting of a thigh and a drumstick, it is advisable to cut into two parts at the joint. Today I will bake chicken thighs with pumpkin.

Peel a piece of pumpkin from the peel and seeds. Cut the pumpkin pulp into cubes about 2 by 2 cm in size.

Peel the onion and cut it into rings. Cut the onion rings in half. And in half again. The result should be quarter rings.

We proceed to the next stage - the preparation of the marinade. To do this, pour sunflower oil into a bowl.

Pour in the spices.

There are no strict rules for choosing them for marinating chicken. You can buy ready-made spices for chicken or chicken, or mix your favorite spices. Most often I cook spices for meat and fish on my own. In this recipe for baking chicken with pumpkin in the oven, I used a mixture of spices from paprika, black pepper, curry, dry adjika.

Pour in the balsamic vinegar, but don't confuse it with plain grape vinegar. Balsamic vinegar is very sweet and thick, while ordinary grape vinegar is very similar in texture and taste to table vinegar, but at the same time differs from it in ruby ​​color and a characteristic smell of grapes. If you do not have it, then replace it with a teaspoon of honey.

In the chicken marinade, peel and squeeze the garlic through a press.

Pour in apple cider vinegar.

Pour in the salt.

Mix the marinade.

Pour the resulting spicy marinade with vegetable oil, vinegar and spices chicken legs (drumsticks, wings or breast). Keep a little marinade for marinating vegetables. Using your hands, rub the marinade over the chicken pieces until they are completely covered. In a bowl, combine pumpkin and onion. Pour marinade over them. Stir.

Place the chicken thighs in a baking dish.

Arrange pickled vegetables around them.

Heat the oven up to 180C. At this temperature with vegetables in the oven should be baked for at least 35 minutes. chicken and vegetables during baking must be watered with the juice formed at the bottom of the mold. Make sure the chicken is ready by piercing it with the tip of a knife. If clear juice appears instead of blood, then it is already well baked and you can safely take it out of the oven.

Wonderful juicy lean meat in a citrus marinade, what could be better? Treat yourself to a sunny lunch on rainy autumn days…

Ingredients

(for 3 servings)

1.5 chicken breast (skinless and boneless, 3 fillets)
- 2 oranges
- 2 tablespoons sunflower oil
- 500 g pumpkin
- 1 tbsp olive oil
- 1 garlic clove
- 2 tsp spice mixes (chili, paprika, cinnamon, oregano)
- 1 tsp dry thyme (optional)

Recipe

Prepare the marinade for the chicken. In a bowl with chicken fillet, add sunflower oil, zest and juice of one orange, 2 tsp. spice mixes. Mix well. Leave overnight (or at least 3-4 hours). Do not salt.

Cut the zest from the second orange and, using the tip of a knife, remove the slices, separating them from all films and membranes. Collect the orange fillet and all the juice in a bowl.

Put the chicken fillet in a baking dish and pour the remaining marinade (I have a special foil dish, but you can use any heat-resistant form). Bake in an oven preheated to 240 C for about 50 minutes.

In the meantime, peel the pumpkin from the peel and seeds, cut the flesh into small cubes. Crush the garlic clove with the blade of a wide knife. In a frying pan, heat 1 tbsp. olive oil, fry the garlic in it until golden brown and remove. Put the pumpkin in garlic oil and fry on all sides over medium heat until golden brown. Add orange juice and fillet, salt, pepper, add thyme. Simmer until the pumpkin is soft over low heat for about 15 minutes.

Serve chicken breast with warm pumpkin sauté, garnished with thyme.

The meat marinated in this way is incredibly juicy and soft. The main thing is not to overdo it in the oven. if you are calm about salt, then it is better not to salt the meat at all, so you will be able to fully enjoy its spicy citrus note. A wonderful addition to such a saute dish, which will add satiety and piquancy. If you can't find thyme, don't worry, you can replace it with a sprig of thyme.

I have some butternut squash left.
Butternut squash is one of the most delicate and fragrant types of pumpkin.
The good thing is that there are no seeds in the narrow part (neck) of the pumpkin. It is very convenient for cooking.
And since I just had a cup with seeds left, it was decided to bake something interesting in it.
The choice fell on chicken with prunes.
The dish will be sweet.
Almost dessert, cinnamon will give the dish an unusual savory flavor.

Ingredients:

● Chicken breast -1\2 pieces
● Pumpkin -1 piece
● Apple -1 piece
● Prunes - a generous handful
● Cinnamon -1 tsp.
● Salt, sugar, pepper - to taste

1. We free the pumpkin from seeds. I have a very small pumpkin.
This is easily done with your hands and a spoon.

2.Cut the apple and chicken breast fillet into cubes. You can take any apples. I didn't peel the skin off the apple, but you can do that if you want.

The readiness of the pumpkin depends on its size and density.
Butternut squash cooks pretty quickly, but it's better to overdo it.

3. 10 minutes before the pumpkin is ready, unfold the foil so that the top layer is baked and looks more appetizing.
You can sprinkle grated cheese on top, then there will be an appetizing crust.

If desired, you can cut the pumpkin into pieces, but it is advisable to let it cool a little beforehand.
