The question: what to cook for breakfast, and to make it delicious, came to me when my daughter and son-in-law went on vacation, and four grandchildren were left in my care, and three of them were schoolchildren. Moreover, they still have the same prejudices: they don’t eat dairy products, but they love eggs. In order to somehow diversify the breakfast menu, I decided to make a selection of recipes for egg dishes that are suitable for the whole family.

Delicious breakfast scrambled eggs in a bun

This is a delicious and original recipe for scrambled eggs, and most importantly - without frying.

We need:

based on 1 serving:

  • 1 egg
  • 1 bun, round (like a sandwich)
  • 10 g ham or sausage
  • 20 g butter
  • 10 g pickled cucumber
  • salt, pepper to taste
  • 500 ml milk, for dipping the buns

Preparation:

1.First, prepare a baking tray and cut the parchment to size.

2. Cut off the top of the buns and select the core, i.e. we make a kind of hole.

3. Cut the ham (sausage) and pickled cucumber into thin strips.

4. Dip the buns in milk and place them on a baking sheet, then put a piece of butter in the middle of each.

5. We begin to fill with filling: ham, pickled cucumber. We do not fill the buns completely with the filling, but leave a small indentation into which we break the egg. Salt and pepper.

6. Bake in the oven first at 200 degrees for 5 minutes, and then for another 10 minutes at 180 degrees.

Cocotte eggs

We need:

based on 1 serving

  • 40 g canned sardines
  • 1/3 part tomato
  • 4 spinach leaves
  • 50 ml cream
  • 30 g hard cheese, grated
  • 20 g butter
  • salt and pepper to taste

Preparation:

1. Mash the sardines with a fork and place them in molds (mugs), after greasing them with butter.

2. Cut the tomato into thin slices and place on top of the fish.

3. Spinach, you can use whole leaves, or you can chop it coarsely and cover the tomato on top, add salt and pepper to taste.

4. Then sprinkle with grated cheese and pour in cream, leaving a little space in the mold where we beat in the raw egg.

5. Bake for 10 minutes at 180 degrees.

Rolls with chicken fillet and tomatoes

We need:

based on 1 serving:

  • 2 raw eggs
  • 2 boiled eggs
  • 4 tbsp. sour cream
  • 1 tsp breadcrumbs
  • 50 g hard cheese, grated
  • 50 g boiled chicken fillet
  • 1/3 part tomato
  • 70 ml olive (vegetable) oil

Preparation:

1. Beat raw eggs with sour cream and breadcrumbs until smooth.

2. Pour this mixture into a greased frying pan. Sprinkle with grated cheese.

3. Cook over low heat for 7 minutes.

4. Grease the finished flatbread with sour cream and salt.

5. Chop chicken fillet, tomato, boiled eggs.

6. Place on one edge: -chicken fillet, tomato, boiled egg and roll into a roll. Fry the roll over low heat for 2 minutes.

7. Cut the roll diagonally.

Eggs Benedict with Hollandaise sauce and Provencal tomatoes

This is the so-called “two in one” breakfast. You can cook eggs with hollandaise sauce and Provencal tomatoes, each separately, or you can serve them together.

We need:

based on 2 servings:

For the Provencal tomato

  • 2 tomatoes
  • 1 small onion
  • 1 clove of garlic
  • 2 sprigs oregano (can be dry)
  • 20 g butter
  • 2 slices of bread
  • vegetable oil

For poached eggs

  • 2 raw eggs
  • 2 tbsp. l salt
  • 2 slices toast bread
  • 50 g salted ham or salmon

For the hollandaise sauce

  • 3 raw eggs
  • 300 g butter
  • 2 tbsp. hot water
  • 1/4 tsp. ground white pepper
  • 1/2 tsp. lemon juice or apple cider vinegar

Preparation:

Tomato "Provencal"

1. Cut off the top of the tomato and select the pulp, making a kind of crater. Salt and pepper. On a prepared paper towel, turn the tomatoes upside down and let the excess juice drain out.

2. Grind the cut top and pulp.

3. Chop the onion and garlic as well.

4. Pour vegetable oil into a frying pan, add butter and fry the onion and garlic. When the onion becomes transparent, add chopped tomatoes and chopped oregano.

5. Cut pieces of bread from the crust and tear them into pieces with your hands and fry with onions, stirring, to form a homogeneous paste. Salt and pepper. Let cool.

6. Place parchment paper on a baking sheet and place the tomatoes. Stuff them with bread mixture and put them in the oven. Bake until the tomatoes begin to crack slightly.

Poached eggs

1.Eggs must be cold.

2. Prepare two saucepans: in the first one, add salt and water, put on the fire and bring to a boil; the second one is prepared for cold water.

3. Pour the broken egg into boiling water, but not violently, close to the water, so that the water almost burns your fingers, and cook over low heat. We don’t stir the water and don’t make any whirlpools.

Before boiling an egg, check it for freshness. We break it into a bowl and see if the yolk does not separate from the white, it means it’s fresh.

There are several more ways to cook poached eggs: - you can line a cup with cling film and beat the egg, wrap the film in a bag and put it in boiling water; - you can put a slotted spoon in boiling water and pour a broken egg from a cup onto it, cook until done. But the egg turns out more beautiful if you boil it as indicated in the recipe.

The poached egg is ready when the white completely changes color and hides the raw yolk. We check periodically, carefully touching the yolk for hardness. It is important not to overcook; the yolk should be runny.

4. Dip the finished egg into cold water to cool.

5. Trim off excess protein.

6. Cut out the centers in pieces of toast bread with a glass and fry them on both sides in a dry frying pan.

Hollandaise sauce

1. Melt the butter in a steam bath.

2. Separate the yolks from the whites. Salt and pepper, add 2 tbsp. warm water or white wine and beat with a blender.

3. Without ceasing to beat, add butter. Add lemon or apple cider vinegar and whisk further.

The sauce should thicken a little. You can add chopped dill to the sauce.

Collecting eggs Benedict

1. Place toast on a plate, place a piece of ham or salmon on it,

top with poached eggs, another piece of ham on top and pour hollandaise sauce over it.

2. Add Provencal tomatoes to the eggs Benedict and serve together, or you can serve them separately.

We need:

  • 9 raw eggs
  • 3.5 tbsp. milk or cream
  • 1 tsp saffron or corn
  • 25 g hard cheese
  • 30 ml olive oil
  • 1 tsp spinach
  • 8 pcs cherry tomatoes
  • 25 g goat cheese
  • 100 g greens
  • 1 tsp ground paprika
  • 1 tsp tarragon

Preparation:

As already announced, our royal omelette will consist of three different layers: red, green and yellow.

1.Red omelette

  • Chop 1/2 of the onion and fry it in vegetable oil, add cherry tomatoes cut into quarters. Let's stew.
  • Break the eggs into a bowl, mix with a whisk, salt, pepper and add cream or milk. We interrupt and divide into 3 parts.

For 3-5 eggs you need 1.5 tbsp. milk or cream

  • Fill the tomatoes with 1/3 of the eggs and fry on both sides over low heat.

2.Yellow omelette

  • Fry a pinch of saffron in oil and pour 1/2 of the remaining egg mixture. Fry over low heat.

3.Green omelette

  • Finely chop spinach, tarragon, greens and fry with chopped onion in vegetable oil.
  • pour in the remaining egg mixture and fry until done

4.Assemble the royal omelette: place the cakes in a stack, place cherry tomatoes, slices of goat cheese, Parmesan cheese and chopped herbs on top.

We need:

  • 6 eggs
  • 300 ml milk
  • 1 tsp soda
  • 20 g butter
  • 1/2 tsp salt

Preparation:

1. Break the eggs into a bowl, add salt and beat the yolks with a whisk without beating.

2. Add milk to eggs and mix.

3. Grease a baking dish with high sides with butter and pour in the egg-milk mixture.

4. Bake at 200 degrees, 35-40 minutes. 5 minutes before the end of cooking, grease with butter.

Original fluffy scrambled eggs - a delicious quick breakfast

We need:

based on 1 serving:

  • 1 egg
  • 1 toast
  • 1 lettuce leaf

Preparation:

1. Carefully separate the yolk from the white and set aside.

2. Salt the whites and beat until they reach stiff peaks.

3. Take a ring-shaped mold, grease it with oil and place it on a heated frying pan.

4. Divide the whites into 2 parts, one of which is loaded into a ring. We make a depression in which we place our yolk.

5. Pour the second half of the protein on top. After a couple of minutes, turn it over to the other side. Fry.

6. When the mold has cooled a little, take it out, place a lettuce leaf on the toast, and an egg on top.
