Next, the sheets are separated one by one so that they do not become moldy during drying. The raw materials are placed in an enamel bowl or on a baking sheet, covered with a damp, clean cloth, or simply with a lid or bag.

It will take 12-24 hours to ferment a rolled leaf, and about 12 hours for a ground leaf. After this, dry at room temperature with good air circulation in the room (draft or fan), in the shade. The tea should dry to the point of brittleness, after which it can still be crushed by hand for convenience and placed in metal or glass jars, keeping the lids loosely closed for several days.

Properly dried and fermented tea has a subtle fruity (prune) aroma. In order not to destroy this aroma, there is no need to brew with boiling water. The taste of mechanically ground tea is reminiscent of apple, but quickly dissipates. After a year, the tea becomes tastier than freshly dried tea.

Although one of the names of the plant is “Siberian tea,” nature is very generous, and it grows throughout the territory of the former USSR. It won't be difficult to find him.
