Prunes compote for the winter. Recipe for a healthy and tasty drink

Fresh prunes are washed. It is best to do this under running water. No matter how many plums are available, attention is paid to each fruit, since the skin of the prunes is covered with a coating that must be washed off. After water procedures, the plum is laid out on a sieve and left for 10 minutes to dry.

Dried fruits, especially purchased ones, are poured with boiling water so that the berries are completely immersed in water, and left for 10 minutes to swell. The second option for processing dried prunes is to rinse under running water under a tap. In this case, the berry will be tougher, and the compote will have to be cooked a little longer.

Without additives

Pour 2 liters of water into the pan, and put it on the stove with maximum heat. 300 grams of fresh plums and 8 tablespoons of sugar are added to the boiling liquid. The fire is reduced, and the container is tightly covered with a lid. The countdown begins after repeated boiling. 15 minutes is enough for a good boiling of the fruit. After the set time has elapsed, the fire is turned off, and the bowl, without opening, is covered from above with a towel. Self-cooled after 4-5 hours, the compote is poured into portioned glasses.

From prunes with orange for the winter

One medium-sized orange, thoroughly washed and cut into rings. During cutting, remove all the bones. It is necessary!

Fresh prunes (400 grams) with seeds are placed in a clean, three-liter jar. Layer orange wheels on top.

2.5 liters of water are boiled on fire, and the contents of the jar are poured into it. Water should fill the container to the very edge of the neck. Excess liquid is poured into the sink.

Fruits are kept in boiling water under a lid treated with steam or boiling water for 15 minutes. The aged infusion is poured into an empty pan. For convenience, use a nylon lid with holes, a metal mesh nozzle or, in extreme cases, a colander.

2 two-hundred-gram glasses of sugar are added to the drained infusion. The syrup is brought to a boil, and boiled for a couple of minutes. Plums with oranges are poured over the sweet base, and the jars are immediately twisted.

If the twist was made with a screw cap, then the jars are left as they are, there is no need to turn them over. If ordinary seaming lids were used, then after corking, the workpiece is placed on the lid, upside down. In any case, the finished compote is insulated for 24 hours with a warm blanket.

In August, when the plum season begins, I prepare compotes from these fruits. When I first learned how to roll cans, it seemed to me that this process was long and tedious. In fact, it is so interesting, fast, tasty and healthy that now compotes from peaches, strawberries and plums are always present on my table. Nothing is easier than cooking real flavored drink at home. I will tell you how I make compote from fresh prunes.

Compote from fresh prunes for the winter

Such a drink is stored for a long time, it turns out to be moderately sweet and not sour. Such homemade preparations always help out in the winter, and in them nutrients are preserved to the maximum. What could be better than opening a jar of fruit and berry compote and enjoying its taste, remembering a warm, joyful summer.

Kitchenware: three-liter jars, a sterilizer, a saucepan, a faceted glass, metal lids for preservation, a seamer.

Ingredients

I took a dark purple durum plum. Pre-fruits are well washed and dried. I put the plum in the drink with a stone, I like the light almond flavor that it gives. For a three-liter jar, I take a half-liter jar of plums. In one jar I put plums and pears, in another I add mint, which will give a unique flavor to the drink.

Banks (2 pieces) and covers (2 pieces) must be sterilized for 15-20 minutes. I put a pot of water on the fire, as soon as it boils, cover with a sterilizer, and sterilize each jar for 15 minutes over low heat. I dip the lids into the same water. I cover the sterilized jars with a lid and leave it closed. So you rid the container of germs and preservation will not deteriorate. The canning machine facilitates my canning process, which ensures hermetic sealing of the jar.

Canning steps

  1. I put on fire 6 liters of water. While it boils, prepare the fruit.
  2. I put the washed fruits into a half-liter jar. This is about 400 g or about 25 pieces.

  3. I add a glass of sugar (250 g).
  4. And 1/4 tsp. citric acid so that the plums do not lose their color.

  5. I fill the cans with boiling water, cover with a lid and immediately roll it up with an automatic machine, turning the handle around the axis counterclockwise until it stops (yours may work differently).

  6. I turn the jar with a lid down, cover it with a blanket on top and leave it for a day.

I have been using this recipe for more than one year, not a single jar explodes! Be sure to wrap and keep the jars warm, the longer the high temperature persists, the better and again your preservation will last longer. Yes, and the jar will not crack from a sharp temperature drop, and the lid will be additionally sterilized.

Over time, the drink will acquire a rich color. I propose to see what ingredients you need for compote and what a rolled up jar of drink looks like in the video recipe.

How to cook prunes compote for the winter

Cooking time: 40 minutes.
Servings: 9 l.
Kitchenware: a saucepan, three-liter jars, a plastic lid for draining conservation, metal lids for preservation, a faceted or measuring glass, a key (sealing machine).

For compote, I bought a ripe “Hungarian”, sweet and sour plum and quite flexible.

Manufacturing steps

  1. I put a pot on the fire, in which I bring 9 liters of water to a boil.

  2. Drain the syrup into a saucepan. To do this, I use a special plastic cover and heat-resistant gloves. I cover the jars again with lids.
  3. I add 750 g of sugar to the pan with syrup. For each jar, a glass (250 g).

  4. Now I fill each jar with syrup and roll it up with a key.
  5. I turn the bottle upside down and wrap it in a blanket.

When the compote cools down, I put it in a dark place, where it stays until winter, acquiring a beautiful shade. This natural, refreshing and healthy drink can be prepared in less than an hour.
