Lavash accordion pie - and you don’t need to knead and roll anything!

I offer a recipe for a hearty and delicious pita pie. The use of pita bread means that you do not need to cook, knead and roll out the dough, so the cooking process does not take much time and effort, everything is extremely simple and fast. In appearance, the finished pie looks a bit like an accordion due to a certain laying of pita bread. The filling of the pie will be a mixture of cheese and cottage cheese. In the future, you can experiment with the ingredient composition of the filling, creating new tastes. The formed cake is poured abundantly with the prepared sauce, so that it comes out very soft and tender inside, while with a crispy crust on the outside.

  • granular cottage cheese - 100 g
  • hard cheese - 200 g
  • milk - 200 ml
  • egg - 1 pc.
  • natural yoghurt - 150 ml
  • lavash thin - 300 g
  • salt, pepper - to taste


Beat one egg into a bowl, add natural yogurt, pour in milk. Mix the ingredients thoroughly, getting a homogeneous mixture, salt a little.


Grate hard cheese, mix the resulting chips with granular cottage cheese, salt and pepper to taste.


Cut the same circles from a long sheet of pita bread. The diameter of the circles should correspond to the width of your form, in which you will bake the cake in the oven. Lavash does not need to be lubricated with anything, just sprinkle with cottage cheese and cheese filling, as shown in the photo.


Then form an “accordion” from each blank by pressing a piece of pita bread along with the filling on both sides. Lay the blanks in the form very close to each other. At the same time, pre-grease the form with vegetable or butter.


After all the “accordions” with the filling are placed in the mold, fill them with the prepared “sauce”. Try to get the filling between the folds of the accordion. Place the cake in the oven on the middle rack. Required temperature 190ºC. Bake the pita pie for about 30 minutes until the top is golden brown. But the baking period can be increased or decreased depending on the characteristics of your oven.


Let the baked goods cool slightly before serving. A simple and quick lavash pie with cheese and cottage cheese is ready!

Lavash accordion pie

First, we will make the dough for the pie: the flour must be sifted and mixed with the rest of the dry ingredients: two types of sugar (regular and vanilla), salt and yeast.

Yeast should be taken that does not require prior "activation" in a warm liquid, but is mixed immediately with flour (they are usually called instant or "instant", on the package in the instructions it should be indicated that the yeast should be added directly to the flour), they look like very small balls.


Whisk the eggs with a fork.


Melt the butter in the microwave or on the stove, then mix with milk and water, cool a little if necessary - the mixture should be slightly warm to the touch - 36-40 g C, too high a temperature can damage the yeast.


Add liquid ingredients and eggs to the flour, mix with a wooden spatula until the dough begins to form during the mixing process.


Knead the dough with your hands directly in the bowl until it becomes more or less homogeneous. If the dough seems too dry to you (you can’t mix all the flour in any way), add a little water (one tablespoon each), if the dough seems too sticky to you, you can add a little flour (1-3 tablespoons). As a result, the dough according to this recipe should be quite soft, but not sticky.


Transfer the kneaded dough to an oiled bowl, lightly oil the top of the dough and cover with a clean tea towel. Put the bowl with the dough in a warm, windproof place for an hour.


While the dough is rising, prepare everything you need for the filling. Measure out sugar and cinnamon, mix in a small bowl.


Melt the butter for the filling, cut the apples into thin slices.


The approached dough should be gently kneaded and rolled out on a lightly oiled surface into a rectangle 50 by 25 cm. Usually I did such manipulations on a surface dusted with flour, but then I decided to try to act on the above advice, it turns out great! And no extra flour is driven into the dough.

If you do not want to oil the table, you can roll it out on parchment paper, greased with a few drops of oil. Also on paper, you can pre-mark the desired dimensions of the rectangle (it is better to draw the necessary contour, and then turn the sheet of paper over so that the pencil does not fall on the dough).


Grease the resulting rectangle with melted butter.


Then sprinkle evenly with cinnamon sugar.


Lay out the apple slices on the dough in even rows, not overlapping. Then cut the dough across into 6 strips.


Now the most time-consuming part of the process: we fold the resulting strips in a pile, the dough will stretch, the apples will move out and fall - just return them to their place.

The other day I was sitting here, thinking about such-and-such a zabatsat from cucumbers ... and I came up with such an amazing pie in the form of an accordion!
And this pie is made of tender cottage cheese dough with amazing spicy, I would even say with exquisite filling... with a light aroma of garlic and smoked meat, well, it turned out so delicious... mmm... she was in shock!

Fat-free cottage cheese - 300 g
Yogurt - 1 glass
Dry yeast - 10 g
Sugar - 1 tbsp. l
Salt - 2 tsp
Flour - 650-700 g
Vegetable oil - 100 g
Warm boiled water - 100 ml
Cumin (for sprinkling) - 1 tsp

For filling:

Fresh cucumbers - 500 g
Eggs - 3 pcs
Smoked sausage cheese - 150 g
Garlic - 1 clove (large)
Ground black pepper - a pinch
Salt - to taste
Vegetable oil for frying - 2-3 tbsp. l

And so, let's get started:

mix cottage cheese with curdled milk, add 2 tsp salt, mix well.
Dissolve sugar and yeast in warm water. Let stand for a while until the mass begins to foam.

Add the yeast mixture, flour and vegetable oil to the curd-yogurt mass. Knead the dough well.
Put it in a warm place to rise. As the dough rises, besiege it and put it back in a warm
place for about 1 hour.

While the dough is rising, prepare a delicious filling:
grate the cheese on a coarse grater, beat the eggs with a pinch of salt, squeezed garlic and ground black pepper

Cucumbers cut into strips and fry in vegetable oil over high heat for 2-3 minutes.

Add grated cheese to the egg mass, mix with a spoon and pour into cucumbers.
Fry quickly until the eggs are cooked, stirring constantly. Turn off the fire, cool the filling.
The filling turned out so delicious, even though you eat it ... without a pie!

Put the dough on a table sprinkled with flour, divide into 16-18 identical pieces.


Roll out each piece of dough or press it with your hands on the table in the form of a rectangle, put the filling and pinch.

Lay out, pressing against each other, all the flagella with the filling, seam down, on a greased baking sheet.
Lubricate the top with yolk and sprinkle with caraway seeds.

This way you can make two pies ... I made one and I did not have enough space on the baking sheet for two flagella ...
I had to bake them separately.
Put the baking sheet in a preheated oven and bake at 180 degrees for 30-40 minutes.
