What you need in a mannik on kefir recipe. The most delicious kefir manna recipes

My family is very fond of sweet pastries. If I don’t have enough time, then instead of pies I cook the most ordinary mannik. It is very easy to make, and any housewife in the kitchen will have the right list of products for its preparation. How to cook mannik on kefir, you will learn today from this article.

Basic recipe for manna on kefir

This is the most common cooking option for manna. The recipe can be modified by adding your favorite products.

For the pie you will need the following ingredients:

  • Kefir - 1 glass;
  • Sugar - 3/4 cup;
  • Semolina - 1 glass;
  • Chicken egg - 2 pieces;
  • Salt - 1/2 teaspoon;
  • Soda - 1/2 teaspoon;
  • Grease for greasing the mold.

This is a necessary list of products for manna. But I also add vanilla sugar to the dough, and sprinkle the finished cake with powdered sugar.

To prepare mannik, follow the instructions:

  1. Pour semolina into kefir in a thin stream, while stirring it with a whisk or a spoon so that lumps do not form;
  2. Leave the semolina soaked in kefir for at least 30 minutes, but preferably for an hour. I sometimes put it in the refrigerator overnight, covering it with a film so that it doesn’t get windy;
  3. Break the eggs and beat them with sugar and salt;
  4. Add soda to the eggs (instead of soda, you can take 1.5 teaspoons of baking powder for dough) and mix;
  5. Mix eggs and semolina with kefir together until a homogeneous mass is formed;
  6. Pour the dough into a greased mold and place in the oven heated to 170-200 degrees. Instead of a baking dish, I use a regular frying pan;
  7. My mannik is usually in the oven for 25-30 minutes. To test it for readiness, pierce the cake with a match. If it is dry, then the cake is ready.

This recipe can be varied. For example, to make the manna more delicious, 5 minutes before it is ready, it is smeared with butter. When the cake has cooled, I run a knife along the middle of its edge, outlining a circle. Along this line, I cut it into 2 cakes with a strong thread. In this way, you can cut any cake - the cut will be very even. On the first cake, I spread condensed milk, jam or confiture. I close with the second cake. It turns out very tasty. What can you offer?

Mannik on kefir with flour

Semolina very poorly communicates with each other. Therefore, the cake turns out to be quite crumbly. If you want the mannik to be stronger, then you need to cook it with the addition of flour.

For this recipe you will need the following products:

  • Semolina - 1 glass;
  • Sugar - 1 cup;
  • Kefir - 1 glass;
  • Wheat flour of the highest grade - 1.5 cups;
  • Butter - 100 grams;
  • Chicken egg - 3 pieces;
  • Soda - 1 teaspoon;
  • Grease for greasing the mold.

The recipe for the dish is as follows:

  1. Stir semolina with kefir and leave it for 1 hour;
  2. Beat eggs with sugar;
  3. Melt the butter and add it to the egg mixture, beat everything well again;
  4. Combine the egg-oil mixture with semolina in kefir, mix the mass until smooth;
  5. Pour soda and flour into the mass. It is best to knead the dough with a mixer or food processor. Then there will definitely be no lumps in the dough. The dough will be thick enough;
  6. Lubricate the baking dish with fat and put the dough into it;
  7. Put the mannik in the oven, heated to 170-200 degrees, and bake it for 30-35 minutes.

You can vary the recipe in the same way as in the previous case. You can come up with something of your own. For example, raisins or other dried fruits, chocolate can be added to the finished dough.

Chocolate mannik on kefir with halva

This unusual mannik, and it turns out to be unusually tasty. He has a place on the festive table.

To prepare it, check if you have all the products in your kitchen:

  • Kefir - 1.5 cups;
  • Semolina - 1 glass;
  • Sugar - 1 cup;
  • Wheat flour of the highest grade - 1 cup;
  • Margarine or butter - 100 grams;
  • Chicken egg - 3 pieces;
  • Cocoa - 3 tablespoons;
  • Soda - 1 teaspoon;
  • Halva - 100 grams;
  • Grease for greasing the mold.

This dessert is prepared as follows:

  1. Stir semolina in kefir, carefully pouring it in and stirring at the same time. Leave the mixture for 30-60 minutes;
  2. Beat the eggs with a whisk or a mixer with sugar;
  3. Smash the butter or margarine previously pulled out of the refrigerator into a granular mass. I do it with a blender;
  4. Add soda to the mixture of kefir with semolina. Stir. Bubbles should start to form;
  5. Then add cocoa and mix the mass again;
  6. Combine eggs, butter and semolina in kefir. Stir the mass until smooth;
  7. Finish the process of preparing the dough by adding flour and again mixing everything until smooth;
  8. Halva cut into small pieces;
  9. Pour the dough onto a greased form, and sprinkle with halva on top. Part of it will sink;
  10. Bake the cake in the oven at a temperature of 170-200 degrees until a delicious crust forms on top.

When exposed to high temperature, halva turns into a creamy mass. Therefore, the mannik turns out as if with a cream inside.

Your mannik will turn out even better if you learn the following secrets of its preparation:

  • When semolina is soaked in kefir, the mass must be stirred periodically. Otherwise, the whole semolina forms one big lump at the bottom;
  • Instead of soda, you can use baking powder for dough, and vice versa. You need to know that 1 part soda is equivalent to 3 parts baking powder;
  • Instead of margarine, it is always best to use natural butter. In extreme cases, you can use special margarine for baking;
  • If you decide to change the recipe by adding a product that does not belong to the category of fermented milk products instead of kefir, then add a little citric acid in addition. Then the mannik will turn out to be as magnificent as on kefir.

Using the same manna recipe, you can add something of your own, every day getting a different result. Delight yourself, your family and guests with new desserts!

Hello readers and guests of the culinary blog site. I recently learned that you can bake a cake without flour, one might say, by chance. How can this be? But maybe. She lived for herself until the age of 38 and had no idea what mannik was and how easy it was to prepare.

In general, I had an idea to cook a banal charlotte, but in the process it turned out that there was little flour at home and yesterday someone ate an apple. Does this happen? And my husband really asked me to bake something, and it’s so reluctant to run to the store. Armed with a laptop and Google, I found what to create from the supplies that I had available: a simple recipe for manna on kefir came up to me. I will share them with you.

Frankly, it was at that time when I baked a semolina pie for the first time that it did not work out for me, because I was in a hurry and made mistakes. It turned out that there are little tricks. I will try to cover all the nuances of cooking.

Ingredients

  • kefir - 200 ml;
  • semolina - 1 cup (250 ml);
  • butter - 50 g;
  • eggs - 2-3 pcs.;
  • sugar - 1 cup (200 ml);
  • vanilla sugar - 1 tsp;
  • baking powder - 2 tsp

How to cook mannik on kefir?

Since the position of flour is assigned to semolina in the recipe, it must first be soaked with kefir and let it swell well. This will take approximately 30-45 minutes of time. Why soak semolina? If you use not swollen semolina, then during baking, the semolina kernels can settle to the bottom and the dough will be heterogeneous, dense and raw from below. Therefore, the process of soaking and swelling is important if we want to get a fluffy cake.

Then beat eggs with sugar, add vanilla sugar, baking powder,

softened butter and mix well with kefir-semolina mixture.

There is also a belief that the whites need to be beaten separately, and then mixed with a spatula into the dough so that the pie crusts are more fluffy and tender. I completely agree with this, if time permits, be sure to do so.

Another important point! Use baking powder, not soda, to make manna dough. Why? Once you're done, you'll understand everything.

Pour the finished dough into the prepared baking dish. It is desirable to take the form of a small diameter so that the cake is higher. A very good cake mold.

Today I suggest you taste a delicious semolina pie for dessert - this is mannik. Delicate, crumbly, with a slight aroma of vanilla and with a crispy crust. It is prepared in an elementary way, from all available and very inexpensive ingredients. This recipe is classic and uses only the main ingredients. Their proportions should not be changed, since the recipe has been proven over the years and you can only spoil everything. But with additional ingredients, you can experiment as you like. For example, you can add dried fruits, raisins and nuts, or you can make chocolate mannik with cocoa. What else I like about this recipe is that manna can be given to young children (from 2 years old). I will not say that the product turns out to be very dietary, but it also does not contain anything harmful. If you are preparing manna for children, then you can remove the baking powder for the dough from the ingredients and halve the amount of oil - these products are not very healthy. Mannik will turn out, of course, not so magnificent, but for kids - what you need. And you can serve a simple classic mannik with jams or fresh berries and fruits.

Ingredients:

  • 2 tbsp. kefir;
  • 2 tbsp. decoys;
  • 1 st. Sahara;
  • 150 g butter at room temperature;
  • 3 eggs;
  • 3 tsp baking powder for dough;
  • a pinch of salt;
  • 2 small pinches of vanilla.

The recipe for a classic manna on kefir

1. Pour kefir into a bowl for dough and add semolina. For starters, it is better to use 1.5 cups. From my own experience, I noticed that semolina somehow swells differently. For a glass of cereal from one manufacturer, you need 1 glass of kefir, and from another you may need 1.5-2 glasses of kefir. Of course, the density of the kefir itself also plays a role here. We mix.

2. Leave for 5-10 minutes while we work on other ingredients. Semolina should absorb some of the liquid and our "porridge" will thicken. On a step-by-step photo, the mass is what it should be: it is not liquid, but not dry either. If the porridge has thickened, but it mixes easily - that's it, proceed to the next step. If the mass turned out to be very thick, dry and dense, add a little more kefir.

3. Transfer the butter to another bowl and rub it with sugar with a fork. It is very important that the oil is at room temperature, as it is much easier to work with.

I also want to say a little about butter. It is better to take not very fatty oil, somewhere around 72%, so that the manna does not turn out to be too fatty. And yet - do not be afraid if during the baking process you see how a thin layer of oil "boils" on top. It will boil away, and an appetizing and slightly crispy golden crust will remain on top of the manna.

4. Break eggs into a bowl with butter and sugar. Pour 3 tsp. baking powder for the dough, add 2 small pinches of vanilla.

5. Mix everything thoroughly with a fork.

6. Pour the egg-oil mixture to semolina with kefir.

7. Mix with a whisk so that there are no lumps. Please note: the mass should turn out to be liquidish, in consistency it resembles biscuit dough.

8. Lightly grease the baking dish with vegetable oil. I use a springform pan with a diameter of 20 cm and a height of 6.5 cm. It is just perfect for this amount of ingredients.

9. Pour the dough into the mold and send it to the oven preheated to 180 degrees for 35-45 minutes (depending on the height of the mold). Mannik rises quite a bit. Therefore, you can not be particularly afraid that he will run away from the form.

10. We take out the finished mannik from the oven, let it cool a little, then remove it from the mold. Despite its delicate structure, mannik jumps out of shape remarkably.

The classic mannik on kefir is ready. Happy tea! πŸ™‚

Mannik on kefir recipe with photo

Posted on March 25, 2017

Recently we prepared mannik at home and imagine my surprise when almost half of my friends who are almost 30 for the first time tried mannik on kefir. Yes, they tried mannik for the first time on kefir.

And so I had the idea to introduce you, dear cooks, to this simple and delicious pastry. What is mannik it is practically the same biscuit only cooked on the basis of semolina.

There are a huge number of recipes for making manna. And almost every recipe claims to be the most classic. At the heart of any manna was and will be a fermented milk product, whether it be sour cream, kefir, sour milk. These are all fermented milk products, so choose which one you prefer. But there is also an unchanged composition of manna, which consists of the following set of products: semolina, flour, sugar, oil.

And so, in order to continue the conversation about manna, I propose to start with the simplest recipe for making manna. There is nothing fancy or complicated about this recipe. All products are familiar and accessible, so get down to business.

INGREDIENTS:

Semolina 1 cup.

Sugar 1 glass.

Kefir 1 glass.

Wheat flour 1 cup.

Egg 2-3 pieces.

Butter 120-150 grams.

Dough baking powder. (or a teaspoon of baking soda).

COOKING PROCESS:

β˜‘ Mix semolina with kefir and leave for an hour so that it gets wet and then does not crunch on your teeth.

β˜‘ Butter is taken out of the refrigerator and left on the table at room temperature. In order for it to become soft and from it in the future it was possible to cook without difficulty.

β˜‘ After an hour, you can start cooking manna.

β˜‘ Eggs, sugar, flour, butter, mix in a bowl and beat until smooth.

β˜‘ Once everything is mixed, you can add a little dough baking powder 1-2 teaspoons will be enough. Leave the mass for 30 minutes.

β˜‘ Combine the semolina with the rest of the products, mix and send to the baking dish.

β˜‘ We bake mannik at a temperature of 180-200 degrees for about 30 minutes.

β˜‘ After 30 minutes, we take the cake out of the oven, let it cool for 10-15 minutes and can be served.

This is the most common recipe for making manna on kefir. This can be said to be the basis of the basics, it is worth starting to study mannik from it so that from the classics you can continue to prepare your own versions of this pastry. And who knows, maybe in a few years someone will also pass on your recipe from generation to generation.

Mannik on kefir recipe without flour

In fact, semolina is the same flour, only coarse coarse grinding. In a pie like mannik, you can do without flour. True, you will have to pre-prepare the semolina itself so that it can completely replace the flour with itself. First you need to soak the cereal until it swells. But if it is visually visible that there are foreign objects such as motes or husks in the cereal, then it is worth sifting the semolina through a large sieve. Or just pick up the trash with your hands.

Like all other kefir manna recipes, this one is not particularly difficult, except that there is a little more semolina in it than in the classic version.

INGREDIENTS:

Semolina 1.5-2 cups.

Sugar glass.

2 eggs.

Butter.

1.5 cups of kefir.

Vnailka 1 sachet.

COOKING PROCESS:

β˜‘ Mix all cooked semolina in a deep bowl with kefir.

β˜‘ Groats should be added to kefir in a thin stream, stirring constantly. In order to prevent the appearance of lumps.

β˜‘ Leave semolina to swell for 40-60 minutes, the longer the better.

β˜‘ Break the eggs into a separate bowl and beat lightly until the yolks combine with the whites, pour the resulting mass into the semolina.

β˜‘ Pour sugar into semolina and eggs. Mix everything well until the sugar dissolves.

β˜‘ Add soft butter and vanillin to the dough and mix everything well again.

β˜‘ Lubricate the form in which we will bake our mannik with vegetable oil.

β˜‘ Pour the dough into a mold and put it in an already hot oven.

β˜‘ Mannik is prepared for 30-40 minutes at a temperature of 180-190 degrees.

Bon Appetit!!!

Flour 1 cup.

β˜‘ Mix semolina with kefir so that no lumps appear.

β˜‘ Mix melted butter with semolina mix and leave for an hour.

β˜‘ After an hour, add flour and vanilla. Mix well.

β˜‘ Grease the mold with oil. It can be vegetable if you don’t want it, you can have a creamy one, there is no difference.

β˜‘ We shift the dough into a mold and send it to a hot oven for 30-40 minutes. We bake at a temperature of about 180-190 degrees.

β˜‘ Do not take too deep a baking dish. So the dough can burn at the edges and remain raw in the middle.

Mannik on kefir with filling

This is a very old recipe for making manna on kefir. According to this recipe, my grandmother often cooked mannik. But she cooked it not just, but always with stuffing. In summer, granny dried plums, apples, cherries and much more, and in winter she made pies and jelly from dried fruits. She always made everything delicious. I suggest you cook a mannik stuffed with dried plums. Perhaps today it is easier to find fresh or frozen non-dried jelly, well then it doesn’t matter to cook from what is at hand, I think that the taste will only get better from this. I didn't have dried ones either, so I use frozen ones.

INGREDIENTS:

Semolina, flour, sugar and kefir all in one glass.

2 eggs.

A tablespoon of butter.

Powdered sugar.

Vanilla sugar or vanillin in a bag.

Salt is quite a bit of a pinch.

Baking powder (of course, granny added soda)

COOKING PROCESS:

β˜‘ Eggs and sugar and a little salt are mixed in one bowl and beat until a white foam appears.

β˜‘ Add semolina to this foam, mix vanilla flour.

β˜‘The next step is to pour in all the kefir and add the baking powder. We mix. The dough is not too thick, which is normal over time, the semolina will absorb the liquid and swell, then the dough will be like dough.

β˜‘ In this form, leave the dough for 20-30 minutes, but for now you can light the oven, let it warm up.

β˜‘ While the oven is heating and the semolina swells, prepare the mold and plums.

β˜‘ Lubricate the form with either vegetable oil or butter. It is better to use a silicone mold, pies always pop out of it without problems. Granny always baked in a frying pan, of course, but why not use progress to your advantage.

β˜‘ Plums should preferably be thawed beforehand.

β˜‘ And so the dough is ripe, let's get down to business. Pour half of the dough into the mold and lay out the plums. Then pour the rest of the batter over the top of the plums.

β˜‘ We put the mannik in the oven and bake it at a temperature of 180-190 degrees for about 30 minutes. Readiness is checked with a toothpick. If it remains dry after piercing the cake, then the cake is ready.

β˜‘ We take out our ruddy mannik from the oven. Cover the form with a cutting board or plate. We turn it over and then put the dish on the mannik on which you will serve it to the table and turn the mannik back onto the dish. Of course, you need to let the cake cool down a little, otherwise your guests will burn their tongues. Sprinkle the cake with powdered sugar. And we bring it to the table.

Bon Appetit!!!

  • If there is no kefir at hand, you can use any fermented milk product - sour milk, sour cream, fermented baked milk, yogurt.
  • For baking manna in the oven, do not take too deep molds. Since the edges of the cake will be completely cooked, and in the middle it will be completely raw. Take the forms wider and the cooking time will be reduced and there will be less chance that the cake will burn.
  • You can easily make a small cake from manna. Cut the finished mannik in half to make two cakes. Soak them with any cream and the cake is ready. The cream can be made from sour cream and jam, sour cream and condensed milk, making custard is also simple. Decorate the top of the cake however you like.
  • Add a little cocoa to the dough (after diluting it in water) and you will get a chocolate mannik.
  • Also, you can always add a few nuts or seeds to the dough, it will also turn out very original.
  • In place of plums, you can use any fruit or berries.

After you make a magnificent pie - mannik, cooked on kefir according to the presented recipe, fall in love with this dish forever. It will become one of the most delicious on your table, and you will cook it not only for the holidays, but also for the family table. Your family will appreciate your culinary skills and will also love this delicacy.

It will allow you to easily and quickly prepare a delicious dish for guests or your loved ones. The cooking process is so simple that even a child can handle it.

Why you should cook this dish

Someone loves kefir mannik because of the ability to cook it quickly, and someone because the culinary masterpiece is made exclusively from available ingredients.

Here are the five main advantages of lush manna on kefir:

1. It can be prepared in less than an hour.

2. The recipe involves ingredients that are easy to find in any store or that are mainly present in the assortment in any kitchen.

3. Mannik can be treated even to children from 1.5 years old.

4. The dish turns out very tasty and lush in any case.

5. It's impossible to screw up a cake.

Mannik on kefir can be prepared using different recipes. It can be made from milk, sour cream, butter, kefir, curdled milk or even baby yogurt. You get the most magnificent cake on kefir or yogurt, and on milk or sour cream it will be softer and more elastic, with a slight creamy aftertaste.

Ingredients

To cook mannik on kefir, we will use:

  • 1 st. kefir;
  • 1 st. decoys;
  • 1 st. Sahara;
  • 1 st. flour;
  • 1 tsp baking powder;
  • 3 chicken eggs;
  • 100 g butter;
  • 1 tsp vanilla sugar.

If you don't want to use baking powder in a recipe (for example, if you're making a pie for a child), you can add regular baking soda instead, taking it on the tip of a knife and putting it out with vinegar. The dough rises no worse than on a baking powder from a branded bag. You can also replace vanilla sugar with vanilla.

Kefir, if desired, is replaced with sour cream, milk or any other fermented milk products. Moreover, it is not necessary to use fresh for baking - if you have expired fermented milk products in your refrigerator, feel free to use them, ensuring β€œwaste-free production”.

Cooking process

Step 1. To prepare a dish according to the recipe for lush manna on kefir, pour semolina with kefir and leave to swell. Some housewives leave the mixture for 30 minutes, and some even for several days, so that the cake turns out to be as soft as possible, without crispy grains.

Step 2 Now it's time for the eggs. Separate the yolks from the whites and beat with a blender, mixer or whisk in a separate container along with sugar until foam forms. You will receive an eggnog, which you will need to leave for a while. Now beat the yolks separately, and mix the flour with vanilla and baking powder or slaked soda.

Step 3 After the semolina has swollen, mix the ingredients together and stir until everything reaches the consistency of thick sour cream. For these purposes, as a rule, use a whisk, blender or mixer. Remember that the dough cannot be too thick or liquid - in the first case, the cake will turn out to be too wet, and in the second - very dry and brittle, and this is wrong.

Step 4 When everything is ready, you need to prepare a baking dish. It all depends on where you are going to bake - in the oven or slow cooker. In the latter case, it will be necessary to line the form with parchment paper, greased with butter or margarine, so that the cake is easier to pull out of the form after cooking. If you want to bake in the oven, you can use both a special baking dish and a regular frying pan, pre-oiled. In this case, parchment paper is not necessary, but you can use it to completely save yourself from peeling off stuck pastries.

Step 5 Our grandmothers share an interesting secret: you can not only grease the container, but also sprinkle with semolina. In the recipe for our pie, we will do just that. To prepare a magnificent manna in the oven, into a container, the bottom of which is greased and sprinkled with semolina, pour the resulting dough and send it to the oven, heated to 180 degrees (200 degrees can be).

If you cook a pie according to the recipe in the oven, it will take 40 minutes, in a slow cooker in the "Baking" mode - 50-70. The finished cake will emit a pleasant aroma, but do not rush to pull it out. First, you need to check the baked goods for readiness with a skewer, it can be a wooden match or a toothpick. Stick them into the dough (somewhere in the middle of the cake) and pay attention to the tip - if it came out dry and without pieces of dough, then the cake is already cooked and it's time to pull it out, but if the dough sticks to the tip or it is wet - send the cake back to oven or close the multicooker lid for another 5 minutes. After a while, repeat the procedure. At the same time, try not to overexpose the cake in the oven.

Step 6 If you wish, you can make a real cake from a pie prepared according to the presented recipe, decorating it with jam, eggnog, whipped cream and even fruit. In this case, you can decorate the top of the cake, cut it in half, laying cream or fruit in the middle, or simply sprinkle it with powdered sugar. The latter will be best if you are going to treat the presented pie to children.

And the recipe for a magnificent kefir pie can be slightly diversified with additional ingredients. Put nuts, candied fruits or raisins directly into the jellied dough to add spice to pastries. In addition, you can even use apples for the filling. Before cooking, do not forget to wash and clean them thoroughly. Apples can be sprinkled with cinnamon to taste.

It is also possible to add cocoa to the dough, and after cooking, sprinkle the cake with chocolate chips on top. Let the manna cool down a little and serve it with tea, coffee or warm milk. Children and adults will be delighted, and the presented recipe will become your favorite among all types of pastries.

Don't forget to leave a comment and bon appetit!
