Ingredients:

For 8 muffins:

  • 4 eggs;
  • ¼ cup milk (50 ml);
  • A pinch of salt and soda;
  • 1.5 tablespoons of vegetable oil;
  • 1 small onion;
  • 1 sweet pepper;
  • 100 g of ham;
  • 50 g of cheese;
  • Fresh greens.

Instruction:

Cut the peeled and washed onion and pepper into small pieces. We cut the ham into cubes. After heating a spoonful of olive or sunflower oil in a frying pan, pour the chopped vegetables together with the ham and fry for 3-4 minutes, until the vegetables are soft.

In parallel, beat the eggs with milk, salt and soda with a fork in a deep bowl. You can add ground pepper and finely chopped greens. We take silicone molds for cupcakes and put on the bottom of each a spoonful and a half of vegetables with ham.
