I make it from shortcrust pastry. It's just wonderful! For the filling, I take onions, eggs and melted cheese - this is the main thing for the filling.

Additionally, I like to add fresh herbs. In particular dill and green onions.

This time I took 300 grams of processed cheese in a soft tube, my husband likes it better.

And you can take just processed cheeses of the "Friendship" type, rubbing them on a grater. Such curds will need 3-4 pieces, depending on the weight. I like them more. But this is a matter of taste for everyone.
I baked this onion pie in a detachable form, with a diameter of 24 centimeters. This amount of dough is enough for forms with a diameter of up to 28 centimeters. But if your shape is smaller than mine, then reduce the proportions.

Shortbread dough preparation:
1. Butter for dough should be chilled - just from the refrigerator, not frozen.


It should be cut into small pieces.

2. Pour half of the wheat flour into a deep mixing bowl. And add salt, sugar and baking powder to it immediately.

3. Transfer the butter to the flour

and grind it with flour into crumbs with your hands.

4. Beat one whole egg and the protein of the second to the butter crumbs, and set the yolk aside to grease the cake in the future.

And grind the dough again until a homogeneous lump is obtained.

5. Pour in the sour cream

and stir it into the dough until smooth.

6. Pour the remaining flour into the resulting soft dough

and knead the dough. It should be soft, not sticky.

7. Divide the finished dough into 2 parts, where one of them is smaller (one third) and wrap in cling film. Place in refrigerator for one to two hours.

Preparing the stuffing:
1. Peel and cut the onion into cubes as small as possible. I confess that I have problems with this :) I can’t carefully chop a large amount of onion, my eyes are very baked: (I tried my best.

2. Fry the onion in vegetable oil, but not much, as if sautéing it. While cooking the onions, add half a teaspoon of salt and the same amount of sugar. This will bring out the flavor better.

3. In the meantime, beat 4 eggs lightly with a whisk, adding a pinch of salt to them.

4. Pour melted cheese to beaten eggs or add grated cheese on a grater.

And beat a little with a whisk, stirring.
5. Add the cooled onion.

And stir.

6. At the end, finely chop the greens and add it to the filling.

Stir. The filling is ready.

Assembling the pie:
1. Cover the bottom of the mold with parchment paper, you do not need to grease anything, the dough does not stick.

2. Roll out a larger ball of dough into a thin layer according to the size of your form, taking into account the sides.

And lay it in the form, distributing it with your hands.

3. Pour over the filling.


4. Roll out a smaller ball of dough to fit the top of the pie pan. Make some cuts

Cover the pie and seal the edges.

5. Brush the top and edges of the pie with the remaining yolk.


6. Bake the cake at a temperature of 200 degrees for about an hour. Everyone bakes differently. In my gas oven, the cake baked for one hour and five minutes.

The finished cake should be completely cool. Only after it cooled down did I take it out of the mold.

This onion pie is served cold. This is a snack cake.

By weight, he came out 1.9 kilograms.

How to make a Snack Pie with Cream Cheese and Onions

Sift flour mixed with salt through a wooden sieve and combine with margarine previously aged in the freezer and grated on a coarse grater.

Use your hands to mash the combined ingredients into flour crumbs.

Add vinegar-slaked soda and sour cream to a bowl with crumbs.

Carefully knead the mass with a spoon, and then sprinkle the table with flour and knead the soft and plastic dough with your hands. Put it in the refrigerator for about 1 hour, remembering to cover with a towel so that it does not dry out.

Peel both onions, cut into thin half rings and sauté in vegetable oil. Set the pan aside until the onions have completely cooled.

Cut the processed cheese into small cubes and combine with raw eggs. You can pre-freeze the cheese, and then grate it on a coarse grater.

Add completely cooled fried onions, salt and black pepper to the filling to taste. To stir thoroughly.

To make a cream cheese pie, we need:

Put the melted cheeses in the freezer.

Prepare chopped dough. You can see a detailed recipe for making chopped dough. I will only briefly recall the main points.

  1. From flour and butter we get crumbs. At this stage, add salt and baking powder.
  2. Add sour cream to the butter-flour crumbs and quickly knead the dough.
  3. Divide the dough into 2 unequal parts and put it in the refrigerator.



For the filling, peel and cut the onion. Finely cut is not necessary, I cut quite large.

Pour a little sunflower oil into the pan, literally 1-2 tablespoons, put the onion and fry it until golden brown.


While the onion is cooling, grate the curds on a coarse grater. Add eggs (raw) to cheese curds and mix, salt to taste.

We take out most of the dough from the refrigerator, roll it into a layer and put it in a pie dish, lining the bottom and forming high sides.

Put the onion and cheese-egg mixture on the dough, evenly distributing.

We take out the smaller part from the refrigerator, roll it out and cover the pie with it on top. Cut off the excess dough, pinch the edges. Prick the dough in several places with a fork.

Leftover dough can be used to make decorations for a cake, or baked in the form of cookies.

We bake a pie with processed cheese in an oven preheated to 180 degrees until golden brown. It took me 45 minutes.

We take the cake out of the oven and let it cool a little, then take it out of the mold, cut it into portions and serve it to the table.

Peel the onion from the husk and cut into small cubes. Heat up a frying pan with vegetable oil. Fry the onion pieces until pale golden and pour into a deep plate. Wait until the onion has cooled to room temperature before continuing cooking.

Step 4: prepare the filling.



When the pieces of fried onion have cooled, pour grated processed cheeses on them, and also break two chicken eggs into the mixture. Carefully split the third and separate the yolk from the protein, add the latter to the filling, and pour the rest into a separate bowl and set aside for now. Mix together all the ingredients for the filling, adding seasonings to taste.

Step 5: form a snack cake.



Remove the dough from the refrigerator and mentally divide into three parts. Pinch off about two-thirds and roll into a layer suitable in volume and size for the shape you have chosen. Place the dough on a baking sheet and pour the filling onto it, smoothing it with a spatula or a tablespoon. Roll out the remaining dough with a rolling pin and place on top, slightly wrapping the edges. With the remaining egg yolk, brush the top and edges of the pie, but don't get carried away and don't miss anything so that you don't get prominent black or pale spots. Important: roll out the dough on a floured countertop, the rolling pin and hands should also be sprinkled with flour.

Step 6: Bake the snack cake.



Preheat the oven to 200 degrees Celsius and put the formed cake into it. This dish needs to be baked for 30 minutes. The finished snack cake will be covered with a golden crust. Take it out after the specified time and leave to cool to room temperature, and then proceed to serve it.

A snack pie stuffed with onion and melted cheese is very good for an afternoon snack, because it is hearty and incredibly tasty.
