After all, it is prepared from purchased puff pastry, and all you have to do is defrost the dough and mold ears with cinnamon and sugar from it.

On the shelves in stores you can find yeast and yeast-free dough. What is the difference between them and which option should we use? The fact is that during baking, yeast-free dough rises solely due to water vapor, and in yeast dough, the work of water vapor is supported by the work of yeast bacteria. There are much more layers of dough in the yeast-free dough, and they are all smeared with oil. Due to this, baking from yeast-free dough turns out to be more fatty, high-calorie, slightly dry and very crispy. Cookies, crunches, snack baskets (see the chicken and cheese snack recipe) and cake layers come out of it wonderfully. Baking from yeast puff pastry is slightly less crispy, but more fluffy and soft. This dough is best suited for puff pastries, pies, cookies and buns. Therefore, if you want to get fluffy and softer cookies, use yeast dough, and if you prefer crispy cookies, buy yeast-free.

Yeast dough can be made with your own hands, but this is such a painstaking task that most hostesses prefer to use ready-made ones bought in a store. Purchased puff pastry is no worse than homemade. The main thing is to remove it from the freezer before cooking and let it melt at room temperature. And only then proceed to rolling and laying out the fillings.

Cooking time: 30 minutes.

Ingredients:

  • 0.5 kg of sheet puff pastry;
  • 0.5 st. sugar (100 g);
  • 8 gr. cinnamon powder;
  • 8 g ground cinnamon.

1. A few hours before the start of cooking, we take out the dough from the freezer, let it completely melt at room temperature. Gently roll the soft dough with a rolling pin in one direction, this will preserve the integrity of its layers.


2. Mix ground cinnamon with sugar, let stand for a couple of minutes. This will allow the sugar to soak up the cinnamon flavor better.


3. Generously, evenly sprinkle the dough layer with the sugar-cinnamon mixture. If desired, gently roll with a rolling pin from above, thus imprinting the spices into the base.


4. We turn the dough into a roll to the middle.


5. Then we also fold the other edge of the dough to the center.


6. The resulting roll is cut into identical pieces 1.5-2 cm thick. In the section, something similar to ears is obtained.


7. We heat the oven to 220 degrees. We cover the baking sheet with baking paper, put the ears on it in rows at a small distance from each other. This is necessary so that the pastries do not stick together, increasing in size during baking. We send the ears to the preheated oven. Roasting time 15-20 min.


8. Puff pastry increases significantly in volume, and the ears become a beautiful brown-golden color, covered with sugar-cinnamon caramel. Take out the cake and let it cool down a bit.

And if you suddenly want to use puff pastry, or make puffs with fresh fruit, the first thing that comes to mind is to go to the store and buy a ready-made product. However, after spending time and working hard once, you can safely prepare the basis for baking for the future, freeze, and use as needed (freeze shelf life is half a year). In addition, the dough prepared at home with your own hands, when you choose the products yourself and are sure of their freshness and naturalness, is many times superior in taste to what is sold in supermarkets.

Yeast-free puff pastry

Using this recipe, you can cook a lot of pastries: puff pastry, all kinds of sweet and savory pies, pizza, and much more.

Ingredients

  • Butter - 220 gr. (can be replaced with margarine)
  • Flour - 150 gr.
  • Egg - 1 pc.
  • Cold water - 160 ml
  • Vinegar 9% - 1 tbsp.
  • Salt - 0.5 tsp
  • Flour - 350-400 gr.

Cooking method

  1. To prepare Part N1, put cold butter cut into pieces in a bowl, not frozen, but just from the refrigerator.
  2. Add sifted flour. Finely chop the butter with a knife, and then knead it with your hands, collect it in one lump. We leave aside, and proceed to the preparation of Part N2.
  3. Sift flour into a bowl, add salt to it, mix.
  4. Pour 160 ml of cold water (not ice cold) into a glass, add the egg and stir well until smooth. Here we add a tablespoon of vinegar.
  5. We make a recess in the flour, and in three steps we add water with an egg, we knead.
  6. After the mass has become soft and does not stick to your hands, roll out a square layer on a surface sprinkled with flour. The size of the square should be approximately 25 * 25 cm.
  7. In the middle we put Part No1 and wrap it with an envelope. Cover with cling film and place in the refrigerator for 30 minutes.
  8. After the time has elapsed, we lay it on the table with the seam down, and again we begin to roll out a square layer measuring 25 * 25 cm. Try to roll out so that the two Parts are distributed evenly.
  9. We fold the envelope, wrap it with a film, and again in the refrigerator for 30 minutes.
  10. After the expiration of time, we repeat the same actions with rolling. Then we send it back to the refrigerator for the same 30 minutes.
  11. This time we take it out of the refrigerator, roll out a square layer and fold it no longer in an envelope, but simply fold it three times into a flat roll.
  12. That's all, you can immediately proceed to use.

It is better to bake products at a high temperature (220 degrees). Then the butter will not have time to melt and the texture will remain as it should.

Alternatively, you can whip up puff pastry cookies with cane sugar, which will give the delicacy an inimitable caramel flavor and beautiful color, and orange or lemon zest will add fragrance to the dessert. Products are made in any size and shape using a sharp knife or special cookie cutters.

  • brown sugar - 120 g;
  • protein - 1 pc.;

Ingredients for making cookies:

  • 500 grams of ready-made puff yeast dough;
  • 150 grams of sugar;
  • 2 teaspoons of cinnamon.

Products for making glaze:

  • 10 tablespoons of boiled or distilled water;
  • 8 tablespoons of sugar;
  • 1 teaspoon lemon zest;
  • 1 teaspoon lemon juice.

Recipe

  1. In this recipe, we will use ready-made puff pastry, which was prepared in advance, but you can also buy it in the store. The main thing is that the dough by the beginning of cooking should not be frozen and not too melted.
  2. When we have the dough, we can start cooking, the recipe is simple. Sprinkle the work surface with sugar, put the dough on it and begin to roll it out with a silicone rolling pin into a thin layer (at least 2 millimeters). It is desirable to roll out the dough on sugar, since during the heat treatment the sugar will begin to melt, and the puff pastry will be saturated with the resulting sweet caramel from the inside. Here's a little trick.
  3. Now it's the turn of the remaining sugar and cinnamon. These two ingredients must be distributed evenly over the entire layer of the finished dough. Both sugar and cinnamon need to be added, focusing on your own taste.
  4. Now you need to start folding a layer of our delicious ready-made dough. We take the ends at the same time and begin to turn them towards the middle, so that we get a kind of “lambs with twisted horns”. The edges of the dough should meet exactly in the middle of the formation.
  5. Now you need to cut our roll with filling into small cookies. We do this with a sharp kitchen knife. The width of the cookie should be about 1 centimeter. Place puff pastry cookies on a parchment-lined baking sheet at a distance of 3-5 centimeters from each other so that they do not stick together during baking. We flatten the puff ears with the filling a little on the sheet and give the same neat shape.
  6. Bake such puff pastry cookies in a well-heated oven for 5-10 minutes. It will depend on how your oven works. We take out the ruddy cookies with the filling from the oven and leave to cool on the sheet. In the meantime, you can make delicious frosting.
  7. To prepare the glaze, we need to pour water into the saucepan and wait for the moment of boiling. Then reduce the temperature and add the required amount of sugar, mix well and cook the resulting sugar syrup for at least 10-15 minutes. The readiness of the syrup is determined by dipping a fork or spoon into it, if “sugar threads” appear when it is removed from the syrup, then the syrup is ready.
  8. Now you will need to do the following: cool the syrup a little and transfer it to the right bowl, we will no longer need a saucepan. Next, add lemon zest and juice to the syrup. Mix everything with a blender or mixer. As a result, we get a homogeneous and lush glaze.
  9. Using a silicone brush, cover with icing, puff ears lying on a baking sheet with filling - sugar. Give the glaze a little time to completely soak the cookies and harden. After all these procedures, the cookies must be removed from the sheet and transferred to a vase.
  10. You can serve Berlin cookies anytime, because they do not require any additions and are good on their own. However, if you use jam, it will not spoil the recipe at all. With the right jam, you can play up both a Berlin cookie and a recipe. Pairs well with raspberry jam, lemon jam, etc.

Cookies with icing or jam can also be made from yeast dough to check the difference between yeast dough and the classic version. However, it must be taken into account that the peculiarity of the yeast dough is that it rises quite strongly during the cooking process.
