When I first cooked this salad with my godfather (by the way, it was on New Year's Eve), my husband looked into the kitchen. I don’t remember how we nevertheless persuaded him to try the salad (apparently, the magic of New Year’s Eve had an effect), but since then my husband orders me to cook “Kiev” salad for any little holiday. That was love at first bite. And this love lasts for more than 10 years.

Moreover, even my mother-in-law - an incredible culinary conservative - even fell in love with this unpretentious salad. So feel free to try it! Do not be afraid!

The simplest products are used as ingredients: beets, carrots, garlic, hard cheese, raisins and mayonnaise.

It seems to me that you don’t even have to buy anything especially for this salad, all these products are in every kitchen. And even more so, for the holiday, cheese and mayonnaise will definitely be bought in abundance (with a margin, there is never a lot of them!).

As for cheese, I have no special wishes, I cooked with completely different varieties of hard cheese - it was always delicious. The only thing I would recommend is not to use bittersweet varieties of cheese (such as Radomer, Maasdam, etc.), although, I think, without my wishes, no one would rub such varieties of cheese into a salad. "Russian", "Dutch", "Creamy / Smetankovy", "Bukovinsky / Poshekhonsky" are perfect.

And, finally, in the literal sense, the highlight of our festive salad is raisins. Of course, if you take the best varieties of raisins, you will not lose. But even with a simple, most ordinary raisin, it will be delicious. This time I specially took the usual raisins - and the salad was a success!


Despite the fact that the salad uses two main vegetables - beets and carrots - they will be presented in different forms: we take raw carrots, and boiled beets.

Therefore, the preparation of the salad should begin with boiling beets. You can do the old proven way: just boil in a saucepan. However, for me it is too long. In addition, I can forget about boiling beets, as a deplorable result - the pan will burn. And I really don’t like to wash the pan after boiling the beets, because too bright traces remain on the walls of the dishes.

Most of all I like to cook beets in the microwave. I put the washed root crops into a glass pan, pour cold water about one finger high, close the pan with a lid and put it in the microwave. I set the maximum power (800 is already enough) and the cooking time is about 20 minutes. After the microwave gives a signal to stop cooking, do not rush to open the door, the cooking process continues for about 5 minutes after turning it off. Beets are ready: fast, easy, clean!

While it cools down, we will take on the carrots.

It needs to be washed, peeled and grated on a coarse grater.


Also, on a coarse grater, it is worth grating hard cheese. Garlic should be crushed either in a garlic maker or on a fine grater. I would recommend mixing cheese and garlic - this will be a single flavor layer of the salad.

At this stage, do not forget to thoroughly wash the raisins and pour boiling water over them so that the raisins soften.


Now we also rub and peeled boiled beets. And then it's time to collect the layers of lettuce. You can simply lay out a layer in a salad bowl and cover it with a thin mesh of mayonnaise. And you can mix in separate bowls each layer with mayonnaise. This will allow the salad to soak faster.

So, on the bottom of the salad bowl lay out the beetroot layer.

On top of it is a layer of carrots.

Now it's the turn of the cheese-garlic layer.

And finally, raisins.

Such a relief salad is very difficult to decorate. Because of the layer of raisins, it looks like "Earl's ruins" :) But - if you wish - you can make a small bright accent as a decoration.


Many of my friends gladly complicate such a salad. No, it is not the cooking process that becomes more complicated, but the flavor bouquet. So, for example, steamed prunes can be added to the beetroot layer (do you agree that this is a classic combination ?!), and enrich the carrot layer with dried apricots. True, the salad can get excessive piquancy and sweetness, but there are no comrades for the taste and color.

I'm used to making salad "Kiev" exactly and only with raisins.

I will definitely make this salad for the New Year's table (at the request of my husband, of course!). And I will do it in advance, for example, on December 30th.

The finished salad can be covered with cling film or foil and refrigerate. It will look great on New Year's Eve: infused, soaked. All that remains is to refresh the top mayonnaise layer and decorate the dish a little.
