How to make pumpkin soup with meat broth

We wash the meat with rib bones in cold water, wipe it off with a paper / woven napkin and put it dry in hot vegetable oil in a pan. Fry on both sides until light crust. Scatter crushed garlic cloves and onion quarters nearby, charcoal and saturate with oil.

We put the fried meat, onions, garlic in boiling water (about 1.7–2 l), then we load the flavors: petioled celery, a little red chili without hot seeds. Do not add salt. Boil again, lower the temperature and cook with moderate boiling for the next 30–40 minutes.

After half an hour, put peeled potatoes into the meat broth - you can cut them in halves, in large pieces. Add bay leaves. Raise the temperature, bring it to active bubbling, decrease the temperature - continue cooking.

In parallel, fry the pumpkin cubes for a couple of minutes. Oiled ones are tastier and more fragrant.

Transfer the pumpkin from the frying pan to the cauldron / saucepan, salt and pepper, taste. We mix flavors-aromas on fire for the last 5-10 minutes. We focus on the variety / softness of the pumpkin and the size of the slices.

We catch celery and pork - discard the greens, divide the meat into neat bars. Strain vegetables, grind until smooth. We dilute with a rich liquid to the desired consistency. We heat it up if necessary.
