How to cook shop kupaty in the oven. Kupaty in the oven: how to cook a dish

Kupaty are sausages made from juicy minced meat with spices in a natural casing, fried on the grill, in a pan or in the oven. I had a chance to get a master class with useful tips upon their permission from the famous chefs K. Ivlev and Y. Rozhkov in the TV show "Eat it immediately" and a meat grinder for their preparation in addition to being a finalist of the competition "Russia Cooking at Home".

Casings are traditionally used as natural casings or, in modern versions, special casings made from natural products. If you don’t want to mess with casings or it’s difficult to get them, then casings for Maggi sausages are quite suitable, only the spices in these packages are not the most suitable, because contain flavor enhancers, and other superfluous for the body ... so it is better to add to the minced meat: peppers, herbs, garlic, pomegranate, bacon, etc. to your liking.

Prepare fatty pork, onions, spices and shells.

Cut the pork into pieces, chop the onion, salt everything, sprinkle with spices.

Scroll the meat and onions through the coarse-mesh filling into a meat grinder. If you do not have a special attachment for making sausages, then fill the casing / shell with minced meat simply with a teaspoon ...

Some meat grinders have a nozzle on which you need to pull the shell "accordion".

It is better to immediately place the entire portion of minced meat for one shell into the loading part of the meat grinder, because then it will not be possible to put it on the ground.

The shell must be held by one end with your fingers and pulled off the nozzle as it is filled with minced meat.

The stuffed shell with minced meat must be divided into portioned kupaty. If there is a lot of the shell, then twisting it, if the shell is in short supply, then simply pulling it with threads.

Before frying, you can boil the kupaty a little, or you can fry it directly raw.

Kupaty is a meat dish, the birthplace of which is Georgia. And no matter how we cook them - in the oven, in a pan, on the grill, in the microwave or even in a slow cooker - these fragrant sausages will be deliciously delicious.

But there is one peculiarity - often the natural shell of the kupat bursts during frying. Because of this, not only is it worsening appearance, but also the taste - the juice and fat flow out, that is, the sausages become dryish, tough. There are several tricks that make kupaty always roasted, appetizing and whole.

How to cook kupaty correctly

In general, in fact, all the secrets of proper roasting kupat can be generalized. The main thing is to understand why they crack. This happens due to the rapid heating of the liquid inside - a lot of steam is formed at once, and under its pressure the thin shell simply cannot withstand. In addition, at this moment in the intestine itself, natural protein is sharply curtailed, that is, at the same time, the elastic qualities of the shell deteriorate.

There is only one conclusion - you need to avoid sudden temperature changes, reduce the possible vapor pressure inside and achieve a gradual decrease in intestinal elasticity.

Why cook kupaty

That is why, before frying, baking or smoking kupaty or any other homemade sausage in a natural casing, you need to boil it.

To get the desired effect, boil them according to special rules:

  • pour cold water into a saucepan, put on medium heat;
  • immediately lower the sausages;
  • we heat up gradually to 80 degrees;
  • maintaining this temperature and not letting the water boil, we cook for 15-20 minutes.

Very convenient to use. If you don't have such a device yet, then the temperature can be determined by eye - when the water with sausages warms up to 65-70 degrees, foam begins to form on its surface. After this moment, we wait another 1-2 minutes - we got the required 80. Now we make the minimum fire so that this temperature is kept constant.

We take out the prepared kupaty - now you can fry them, bake them, etc. You can also send them to the freezer. Only then it is important not to forget to defrost well, otherwise, due to the large temperature difference, even the prepared shell may burst.

We bake in the oven

The easiest way to bake these sausages is in the oven. Put the welded semi-finished products on the wire rack.

As soon as the oven warms up to 180 degrees, put a baking sheet in it for 20-30 minutes. If there is a "grill" function, turn it on immediately, the time can be reduced to 3-5 minutes. When the browned crust becomes appetizing, we serve the sausages to the table.

By the way, if you cook kupaty in the oven in a sleeve or foil, then you can add some vegetables - you get a full-fledged dish with a delicious side dish.

Cooking in a pan or slow cooker

You can also fry kupat in a regular frying pan. It's even easier here - over medium heat, in a deep and thick-walled frying pan greased with fat, fry the meat dish on both sides.

These Georgian sausages are cooked in the same way in a multicooker on the "fry" mode.

You can also make unprepared kupat in a frying pan or a cartoon. To do this, put our meat dish into a container, pour 0.5-1 cups of cold water, 1 tbsp. vegetable oil and cover with a lid. As soon as the water boils, remove the lid. When the liquid has evaporated, the kupat will be fried. Just remember to turn them over to the other side. This method is also good at preventing cracking of the natural shell, especially if the fire was initially small. In the cartoon at this stage it is better to choose the "extinguishing" mode.

Kupaty in the microwave

The fastest way to cook kupat is in the microwave. It takes about 15 minutes for the meat inside the shell to come to readiness. True, a golden brown crust on top will not work, unless your microwave oven has a built-in grill. In this case, we will divide the cooking into 2 stages:

  1. pre-cooked sausages, not forgetting to cover with a lid, keep in the microwave for 10 minutes at the highest power;
  2. then remove the lid and grill until golden brown.

Grill and BBQ

Any meat is best cooked outdoors. Kupaty is no exception. Crispy crispy crust, a special incredibly appetizing aroma and juicy minced meat - the taste is simply delicious!

However, grilling any sausages without cracking the skin is very difficult. Therefore, I advise you not to forget to weld them beforehand and be sure to chop them. It's just great if you send to the grill not cold, but heated up to 60-70 degrees - so the risk of cracking will become even less.

In addition, homemade kupaty turns out to be delicious if smoked. To do this, you need to have a smokehouse.

At the end I offer a video simple recipe incredibly tasty kupat:
