Incredibly flavorful raspberry puffs are the perfect baked goods to serve for breakfast, afternoon tea or dessert. It is prepared as easy as shelling pears and even a novice cook can handle such a test, because it is pliable and not whimsical at all. For treats, try to choose dense raspberries with less juice so that it does not spread over the entire baking sheet when baking. Puffs are prepared with the addition of powdered sugar, but if you like sweeter desserts, then add granulated sugar to the filling. You can also add ground cinnamon - it will give the baked goods a brighter and more colorful flavor.

You will need:

  • 200 g ripe raspberries;
  • 200 g puff pastry;
  • 1.5 tbsp powdered sugar.

Preparation

1. Dust the work surface with flour and roll it out on it puff pastry into a rectangular layer. You can use any type of this test: yeast, yeast-free. Let's cut the layer into rectangles. You can create puffs of any shape you like and what you like: baskets, boxes, rolls, etc.

2. Lay out the washed and dried raspberries on each rectangle.

3. Gently tuck the edges and blind them together, forming a small box or basket with a filling inside. To those who love sweet pastries, you can sprinkle granulated sugar in the middle of the blanks.

4. Place the blanks on a baking sheet, covered with a silicone mat or baking paper. Place the baking sheet in the oven at 200 degrees and bake the puffs for about 15-17 minutes until golden brown. As soon as you smell the bright smell of fresh baked goods and see that the puffs have acquired a golden crust - the dessert is ready! Take it out of the oven and let it cool.

5. After cooling down, grind the puffs with powdered sugar, sifting it through a strainer.

The puff pastry should be allowed to thaw, but only slightly - so that it becomes a little soft and you can "work" with it.

Sprinkle the work surface with wheat flour. Spread out the dough and roll it out to the desired thickness. Cut in half.


You can make triangular puffs. To do this, you need to cut out square-shaped pieces of dough in advance. Excess dough can also be used to sculpt puffs. Fold the dough squares diagonally.


Unroll the dough pieces. Place fresh raspberries in half. Sprinkle with sugar - if the raspberries are sour, then there may be more sugar.


Now sprinkle the raspberries with starch - this will allow the raspberry juice to remain inside the puff, at least most of it.


Cover the filling with the other half of the dough and carefully join the edges. Several cuts can be made on top.


Send the blanks to an oven preheated to 180 degrees and bake them for 20 minutes. Serve warm or chilled. Before serving, you can sprinkle with icing sugar or pour over sweet sauce.

Sometimes you want to cook something for dessert, for tea, without making any special efforts and using a minimum of time. Raspberry puffs are just perfect. We will use frozen raspberries for the filling. It must be mixed with sugar, and in order for the juice to remain inside the puff or to flow out minimally, it is imperative to add starch.

Ingredients

  • 250 g puff pastry
  • 200 g frozen raspberries
  • 2 tbsp. l. Sahara
  • 2 tsp starch
  • 1 tbsp. l. vegetable oil

Preparation

1. If the puff pastry has been frozen, remove it beforehand and thaw it at room temperature. You can also transfer it from the freezer to the refrigerator so it thaws but doesn't melt completely - especially if you plan to start making the puffs in a couple of hours.

2. If the raspberries were frozen, remove them from the freezer, thaw and mix with sugar. Thus, it turns out that you can cook puffs with berry filling at any time of the year.

3. Roll out a piece of puff pastry to form a thin layer. Cut into triangles.

4. Place a small amount of raspberry filling, 1.5–2 tsp each, on the half of each triangle, being careful not to add too much juice. Some of it will likely run out onto the baking sheet during baking and start to burn.

5. Sprinkle 1/3 teaspoon each on top of the raspberries. starch - potato or corn.

Of course, it is better to use homemade puff pastry, but it can take more than six hours to prepare it, so this time we choose the faster method.
Ingredients:
- puff pastry (store) - 250 grams,
- fresh raspberries - 35-40 pieces,
- fresh chicken egg - for greasing,
- granulated sugar - to taste.

1. Get ready dough from the freezer and wait until it softens. If the dough is frozen, the envelopes may not rise.




2. Roll out the puff pastry to make a large square. The dough should be thin. Cut the large square into several smaller ones. I got 12 pieces. You can use a knife or a special knife for embossed ends.




3. Prepare the raspberries. Wash it well.






4. Place two raspberries on one small square.




5. Put half a teaspoon of granulated sugar on the raspberries.




6. Take two opposite ends of the square and connect together, then connect the rest of the ends in the same way with the first two. You will have a raspberry envelope.






7. Put raspberries on the rest of the squares in the same way and add granulated sugar.




8. Similarly, connect the ends on each square to make envelopes. Prepare a baking sheet. A silicone mat is a great alternative to a baking sheet. Place the envelopes on the rug and let sit for twenty minutes.




9. Drive one chicken egg into a cup and shake well. Prepare a brush or cotton bandage.




10. Grease each envelope with an egg.
