According to historical data, the main ingredients in it were white kvass, cucumbers, potatoes and onions. However, time passes, tastes and preferences change, and with it the composition of cold soups, including okroshka. Preparation

Cook the potatoes until tender. You can cook in a "uniform", you can immediately clean and cook, it does not matter. Then cool and cut into small cubes. Hard boil the eggs. To do this, put in a saucepan, fill with water. Add a teaspoon of salt to the water. If there is a crack in the egg, the salt will prevent the egg from flowing out. From the moment the water boils, cook the eggs for 8-10 minutes. After that, drain the hot water and fill the eggs with cold water. Refrigerate, peel and chop finely. Place the chopped potatoes and eggs in a saucepan.


Wash fresh cucumbers, peel and finely chop or grate on a coarse grater, as I did. Add to eggs and potatoes in a saucepan.


Wash green onions and chop finely too. Put in okroshka.


Parsley or dill, or both, wash, chop and add to the pan.


Wash the chicken fillet and place in a saucepan. Fill with clean, filtered water. Bring to a boil, reduce heat, remove foam and cook for 20-25 minutes until tender. Then remove from the pan and refrigerate. Finely chop the chicken fillet and add to the okroshka.


Pour mineral water into a saucepan.


Season with salt to taste and add lemon juice or citric acid to taste. Adjust the thickness of the soup with water.

Okroshka on kefir with mineral water

Classic okroshka on kefir with mineral water gets a slight piquancy in taste. A refreshing note is accentuated by a variety of spicy herbs - parsley, dill and green onions. This is the simplest recipe with a traditional set of products.

  • Potato tubers - 1-2 pcs.;
  • Selected egg - 2 pcs.;
  • Red radish - 100-150 g;
  • Spicy herbs (dill, onions) - a bunch;
  • Kefir - 1 l;
  • Mineral water - 700-800 ml;
  • Boiled sausage - 250 g;
  • Fresh cucumber - 1-2 pcs.;
  • Table vinegar 9% - 1 tbsp. l .;
  • Salt (regular or with iodine) - to taste.

Preparation:

Prepare food. Boil the potatoes in their skins until tender. Cool the tubers. Hard-boiled eggs, cool under running water. Rinse the spicy herbs, pat dry on a towel.

Start slicing. Potatoes, eggs and sausage - cubed. If you cook in many portions, there is an option to use a food processor with a special attachment for slicing. Place food in a saucepan.

Cut the radishes in the same way.

Chop the greens with a knife. Put everything in a common saucepan.

Pour cold kefir. Add mineral water, also cold and with gases. Mix everything. It will turn out to be almost a whole 3-liter saucepan.

Pour in vinegar. If there is only essence and not 9% vinegar, simply dilute it with water. The ratio of acid and water is 1: 7. Stir and use in recipe. Add salt to taste. Stir again. Close the lid. Ingredients:

  • Cucumber - 1 pc.;
  • Dill - 3-4 branches;
  • Onion feathers - a bunch;

Preparation:

Boil eggs and potatoes in advance. If these products are left over from the preparation of the salad, great. Put them in okroshka.

Boiled tubers pass through such vegetable cutters without problems. You can use only one kitchen device to cut all the ingredients - a coarse grater. Sort out the greens, rinse.   • Lemon - 1 pc.;
  • Carbonated mineral water - 1.7 liters;

Preparation:

Boil the eggs until they are hard boiled. Cool, clean. Cut into small cubes. Send to the pan.

Cut the sausage there. Here it is boiled, but if you wish, take whatever you like.

Then cut up the radishes, cucumber and all the greens. Instead of fresh cucumber, it is permissible to use salted or pickled. And together with salted mineral water, maybe salt is no longer needed. See for taste.
