  • We prepare all the ingredients you need for cooking. In order to prepare our dish, it doesn't really matter which rice grains are used - long or round. We wash rice under running water, take a small saucepan, fill in the grains, fill them with 200 ml of cold water. We put the container on the stove, close the dish with a lid, turn on low heat and cook until the moisture has completely evaporated.


  • In order not to waste time in vain, we will prepare the rest of the ingredients for the dish. We peel the garlic from the husk, wash it under running water and knead each slice with a knife. Bell pepper we also rinse, get rid of the centers with seeds and cut into small cubes.


  • Now we need a frying pan. Take a bowl and fry the garlic in vegetable oil until the vegetable is golden brown. As soon as this happens, take out the garlic and send the chopped bell pepper to the pan. The oil was soaked in garlic, and therefore became even more aromatic. In this composition, we will fry the peppers, setting a low heat on the stove.


  • Time to chop the green onion and sprinkle it over the pepper when the vegetable turns golden. We clean the ginger root, rub it on a fine grater and send it to the pan with the rest of the products.


  • Break one egg directly into the pan, stir and keep on fire for another 1-2 minutes.


  • During this time, the rice has been cooked, and therefore we can add it to pepper, eggs and onions. Pour the whole composition with soy sauce to saturate the taste.


  • Thai fried rice is almost done. It remains to sprinkle it with ground red pepper so that the dish acquires the spice it needs. Do not forget to add salt. The amount of these spices is adjustable to taste.


  • We clean the shrimp. To make your dish look even more original, truly exotic, you can leave the tails of the shrimp. We send seafood to the ingredients in half ready. We fry for a short while, 1-2 minutes will be quite enough for the shrimp to reach the required state. Remember to stir the dish constantly.

Prepare all products in advance

In order to have time to put all the ingredients in the wok - a deep cone-shaped frying pan with a long handle made of thin metal, although you can use a regular deep pan - it is best to prepare them in advance. This is the peculiarity of Asian cuisine in general - and Thai in particular - cuisine: everything is done very quickly.

Boil rice properly

Rice must be boiled in advance to a crumbly state - in Thailand, special rice cookers are used for this, which are very easy to use and keep rice in the desired form for a long time, but you can also take a regular pan. You should choose any long-grain "jasmine" rice, which is boiled with a minimum amount of salt at the rate of two parts of water for one part of dry rice, plus one glass of water for the entire volume. If there is clearly not enough water, add small portions, make sure that it remains crumbly, but not too hard. It needs to be cooled to room temperature.

Ingredients

For the sauce

  • Soy sauce: 2 tablespoons
  • Fish sauce: 2 tablespoons
  • Brown sugar: 1 tablespoon
  • Oyster sauce: 1 tablespoon
  • Freshly ground black pepper: ½ teaspoon

For rice

  • Olive or sesame oil: 4 tablespoons
  • Onion: one medium, chopped
  • Garlic: 7 cloves, finely chopped
  • Cherry tomatoes or sliced ​​tomatoes: about 200 g
  • Carrots, thinly sliced: ½ cup
  • Peeled shrimp without tails and shell: about 300 g
  • Cooked chilled rice: 6 cups
  • Eggs: 2 large
  • Basil: 1 cup, not finely chopped with a knife
  • Green onions, chopped: ½ cup
  • Salt and pepper: to taste
  • To serve: sliced ​​cucumbers, tomatoes and lemon slices.

Preparation

Mix all ingredients for the sauce thoroughly in a small cup. Heat oil in a deep frying pan or wok, add onion and garlic, quickly fry for about a minute. Add tomatoes and literally a minute later - shrimp, fry until orange-pink, stirring occasionally.

Add cooked rice, mix everything so that there are no lumps, pour over the sauce. Make a hole with a spatula, pushing the rice apart, and drive in the eggs, making a kind of scrambled eggs out of them. Then mix everything together. Season with salt, add spices to taste, garnish with fresh vegetables.

Second phase- add the beaten eggs and fry, stirring constantly. When eggs are fried, set aside. You can simply add eggs to the chicken and fry in one skillet. And you can do all this separately.

Third stage - pour boiled rice into the chicken, add the eggs and stir the contents of the pan vigorously for about 1 minute.

Then add soy sauce, fish sauce, onion and, stirring the rice, fry for about 1 minute. You can add salt, pepper, sugar to taste.

When the Thai fried rice is ready, remove the pan from the heat, put in a mold and place on a plate, and garnish with slices of cucumber, tomato, herbs and half a lime. Sometimes you can still find an option when a very fried egg is placed on top.

It must be remembered that Thai rice with chicken should not turn out to be dry, overcooked, so do not overdo it and do not forget that you need to cook, stirring constantly over medium heat.

Lime juice can be poured over ready-made rice and mixed, then the dish will have a special sour taste.

  1. For this recipe, you can use both long grain rice and round grain rice. We wash the rice grains thoroughly, and then pour 200 ml of drinking water. Boil over low heat with a tightly closed lid until moisture completely evaporates.
  2. While the rice is cooking, let's move on to the other ingredients. Knead the peeled garlic clove with a knife. After removing the seeds and internal partitions, cut the bell pepper into cubes.
  3. Fry the garlic in oil until a ruddy shade is formed, and then remove it from the pan (the vegetable oil is already saturated with the garlic aroma, so dehydrated garlic is no longer useful to us). Fry the bright sliced ​​bell pepper in aromatic oil over moderate heat.
  4. As soon as the pieces of pepper acquire a golden color, put finely chopped green onions, as well as peeled and grated ginger into a pan.
  5. Next we add a raw egg continuing to fry the mixture for another 1-2 minutes, stirring occasionally.
  6. We send ready-made rice to the pan with fried pieces of pepper, onions and an egg. Then pour the soy sauce over the ingredients.
  7. Sprinkle the almost finished dish with hot ground pepper, mix everything thoroughly. We remove the sample, salt if necessary.
