    A day before cooking, the meat was marinated in the mixture mayonnaise, salt And spices. The dosage of the last two components is done according to taste. In particular, I used a ready-made set of spices “for barbecue” with rosemary, black pepper, paprika, etc. All components of the marinade need to be mixed and rubbed on the neck, thoroughly coating the “pockets” obtained by slicing. Now cover the meat and put it in the refrigerator until preparations.

    “Accordion” meat turns out just as tasty and appetizing in the oven when baked in a sleeve. In a similar manner, you can prepare a dish marinated in any marinade and supplemented with the desired composition of filling products, which can traditionally include tomatoes and cheese or in combination with mushrooms, vegetables, and bacon.

    Ingredients:

    • pork carbonate – 1-1.2 kg;
    • bacon - 5-7 plates;
    • tomatoes – 3 pcs.;
    • cheese – 150 g;
    • mustard – 2 tbsp. spoons;
    • garlic – 2 cloves;
    • oil, salt, seasonings.

    Preparation

    1. Rub a fan-cut piece of meat with mustard, salt, pepper, garlic and oil.
    2. Fill the meat with slices of tomatoes, slices of cheese and bacon.
    3. The structure is secured with skewers or toothpicks and baked in a sleeve for 90 minutes at 180 degrees.

    Baked meat “Accordion” with mustard and vegetables is always tender, soft and juicy. In addition to traditional tomatoes with cheese, in this case, bell peppers, zucchini, carrots and other vegetables of your choice are used as a filler. Vegetable slices can be inserted into the cuts and placed on the sides of the meat “log”.

    Ingredients:

    • pork carbonate – 1-1.2 kg;
    • zucchini – 0.5-1 pcs.;
    • tomatoes – 3 pcs.;
    • carrots and bell pepper – 1 pc.;
    • cheese – 150 g;
    • mustard – 2 tbsp. spoons;
    • ginger – 1 teaspoon;
    • garlic – 2 cloves;
    • soy sauce and oil - 3 tbsp. spoons;
    • salt, seasonings.

    Preparation

    1. Pork is prepared.
    2. Mix soy sauce, mustard, oil, ginger, garlic, spices, rub the meat and leave overnight.
    3. Cut vegetables and cheese, put them into the cuts and on the sides, placing the slice on a sheet of foil.
    4. Cover with a second sheet and bake for 90 minutes at 180 degrees.

    Delicious “Accordion” meat can be cooked not only in the oven. If you use a multicooker to implement the process, the result will be no worse. The meat is baked in the “Baking” mode directly in the bowl, having first coated it with a little oil or, just like in the classic version, it is placed together with the accompanying components in foil.

    You come to visit a friend, and on the table there is pork baked “accordion”. When you see such delicious meat in pictures, it seems that it is very difficult to make. Such a tasty and beautiful dish cannot be simple - it looks soft, juicy and aromatic, with a cheese crust. However, in practice it turns out that it is quite simple to prepare, you just have to make up your mind and start. The longest time is direct cooking in the oven.

    Cooking food

    “accordion” is a very simple dish that cannot be spoiled. Even those who practically never use an oven can cook it. The main thing is that the meat is good and fresh.

    There are many, but this is one of the simplest but most delicious. You can please your guests with them at any time. After all, it is done very quickly, even if the guests are already on the doorstep and appear without warning.

    Pork with a thin layer of fat on top or inside is best, so the meat will be more juicy. Therefore, it is better not to take the tenderloin. Make sure it is a smooth, oblong piece, reminiscent of a reduced loaf of bread. Meat from the neck or shoulder blade works well. Make sure it is not weathered or dark in color.

    The “Accordion Pork” dish, which is presented below, requires careful attention only in the first fifteen minutes, then we put it in the oven for an hour and you can forget about it.

    Ingredients

    To prepare, we will need the following ingredients: about one kilogram of pork, a couple of tomatoes, about two hundred grams of cheese, four cloves of garlic, spices - any to your taste, the presence of black pepper is desirable, but this is not a prerequisite. Caucasian and Abkhazian mixtures go well with meat.

    Accordion-baked pork: preparation

    The first thing to do is rinse the meat thoroughly and dry it with a paper towel. Then we make cuts in it every one and a half centimeters (a little more often) for three-quarters of the thickness of the pork.

    If you pre-fry the meat for 2-3 minutes in a hot frying pan, it will look prettier and be juicier. Wash the tomatoes, cut out the area with the branch, cut into rings. The most convenient way to do this is with a knife, either very sharp or with serrated teeth. You can buy cheese in slices or cut it yourself. Garlic must either be chopped or squeezed through a special device.

    Coat the meat with salt and prepared spices. Accordion-baked pork will be tastier if the cuts are also seasoned with spices. Then put tomato, cheese and garlic into each hole. We do this with the whole piece. Garlic can be mixed with all the spices in advance. We also coat the top with a little mixture of seasonings.

    After wrapping the meat in foil several times, place it on a baking sheet or in a special bowl. Then put it in the oven for an hour. The temperature should be about two hundred degrees, maybe a little lower. “Accordion pork” can be in the oven for an hour and a half, but then the piece should be larger, for example, 1.5-2 kilograms. However, the easiest way is to take it out after an hour and see how ready it is.

    The last stage of cooking

    Then remove the foil from above and put it back in the oven for a while so that the meat browns a little. If you have a "Grill" function, then turn it on. If not, then the pork needs to be moved to the very top. When the crust appears golden brown, the pork is ready. The meat is served on a large plate, garnished with herbs. You can put a side dish on the same dish. Whole potatoes or mashed potatoes look impressive, but, of course, vegetables don’t hurt either. Enjoy your meal!
