Curd cheesecake with prunes recipe. Cheesecakes with prunes and dried apricots

How to prepare cheesecake recipe with prunes - a complete description of the preparation so that the dish turns out very tasty and original.

Fragrant dried fruits are the most popular filling for any type of dough, a natural concentrate of vitamins that stores well. The dense, sweet and sour plum pulp is ideal for making cheesecakes: it does not burn and is easily crushed if necessary.

Dried fruits will be brought back to life by soaking in boiling water for a few minutes. The unique aroma and taste of dried plums should not be drowned out by any spices. They are added to the finished dough. Baking made from fatty cottage cheese comes out especially juicy.

Cheesecakes with prunes are good with sour cream or a glass of fresh yogurt.

Contents [Show]

  • 300 g cottage cheese
  • 5-6 pcs. prunes
  • 1 chicken egg
  • 2 tbsp. l. Sahara
  • 1 pinch of salt
  • 1 pinch of soda
  • 4 tbsp. l. flour
  • 60 ml kefir (sour cream)
  • ground cinnamon
  • vanilla optional
  • vegetable oil for frying

Preparation

1. Place the cottage cheese in a bowl; if desired, you can grind it or leave larger grains.

2. Cut pitted prunes into small pieces. If dried fruits are too dry, it is best to immerse them in warm water for half an hour, and only then cut them.

3. Add chopped prunes, chicken egg, kefir or liquid sour cream, and spices to a bowl with cottage cheese.

4. Add dry ingredients - sifted wheat flour, sugar, salt, soda, spices. Mix the cheesecake dough. The dough should not be too dense, do not overdo it with flour - otherwise the cheesecakes will turn out hard and not airy.

5. Place the balls of curd mass on a greased, heated frying pan, press them down so that the cheesecakes do not turn out too thick. It is best to work with wet hands - the mass will not stick. Fry over low heat with the lid closed for 5 minutes.

6. Turn the browned cheesecakes with prunes over to the other side and fry for another 3-4 minutes.

Place the finished cheesecakes in a stack on a dish and pour topping, sour cream, and honey on top. Serve warm with tea or cocoa.

Note to the hostess

1. Finding too sour cottage cheese in the refrigerator is an excellent reason to make cheesecakes. When cooked, this product gets rid of the shortcoming that caused households to refuse to eat it. In finished products, unpleasant sourness will not be felt at all.

2. Buyers are sometimes confused by the certification name of prunes - dried and dried. These varieties have many characteristic features, but for the above recipe they are unimportant: any type of dried plum is placed in the curds, and the dish will still turn out excellent.

3. It is completely unnecessary to extinguish the soda intended for loosening such a dough, since it contains two fermented milk components - kefir (or sour cream) and cottage cheese. They will ensure the desired reaction of the alkaline ingredient.

4. Here’s a quick way to steam dried fruits: moisten them generously with water and put them in the microwave for half a minute. Even very hard prunes will become elastic and soft after this.

5. Coarse flour used as a breading will prevent the cheesecakes from deforming and sticking to the bottom of the frying pan. If the housewife has a frying pan with a high-quality non-stick coating, semi-finished products do not need to be breaded.

But to prevent this hearty dessert from becoming boring, experienced chefs recommend experimenting with the products used. For example, add a variety of fillings or replace raisins with other dried fruits that will add new flavor nuances. Want to try something new? Then we invite you to consider a step-by-step recipe for cheesecakes with prunes in the oven.

How to cook cheesecakes with prunes in the oven

To begin with, be sure to transfer the fatty fresh cottage cheese into a suitable dry bowl, where we will make the aromatic curd dough.

Next, use a regular fork to thoroughly grind the white mass for at least 5 minutes (to reduce this time, you can beat the cottage cheese with an immersion blender), then break a fresh egg inside and pour in fine sugar, the amount of which can be reduced or increased depending on your own taste.

We continue to beat the tender mass until it becomes relatively homogeneous, and when this happens, add a pinch of soda (it is not necessary to extinguish it, but if you want to do this, it is better to use a couple of drops of lemon juice) and 2 teaspoons of fine semolina.

Mix the dough and add the last ingredient: pitted prunes, washed in boiling water for several minutes and cut into small neat pieces.

Now, with wet hands, we form a medium-sized ball from the viscous dough, which we immediately transfer to a flat plate, where we have previously sifted the wheat flour. Having pressed the workpiece and formed a classic curd cheesecake with prunes, bread it on both sides.

At the last stage, we cover a baking sheet with parchment or oiled paper, on which we place the future cheesecakes in the oven.

We bake the dessert for about 20 minutes at 190 degrees, after which cheesecakes with cottage cheese and prunes can be served in the oven, topped with sour cream, jam or powdered sugar. Bon appetit.
