The generous summer season does not last forever, which means it is not always possible to add fresh berries to dessert. In this case, you can prepare baked goods with frozen raspberries, which are in no way inferior in taste to the classic version.

Ingredients:

  • raspberries – 500 g;
  • baking powder – 2 g;
  • eggs – 4 pcs.;
  • sugar – 200 g;
  • flour – 160 g.

Cooking method:

  1. Turn the whites into foam using a mixer, adding sugar little by little. Add the previously separated yolks one at a time.
  2. Add flour and baking powder in small portions, remembering to sift it first.
  3. Carefully stir pre-thawed berries into the resulting dough. It is better to drain the resulting juice into a separate container. If it gets into the dough in large quantities, it can soak the biscuit.
  4. Pour the mixture into a greased pan and bake at 180°C for about 30-35 minutes.

This airy delicacy goes well with tea and coffee.

From puff pastry

Beginning housewives are sometimes unable to prepare puff pastry. And sometimes there is simply not enough time to wait until it “ripens”. Therefore, for the next recipe it is more practical to buy a ready-made base.

Ingredients:

  • raspberries – 100 g;
  • sugar – 100 g;
  • yeast puff pastry – 350 g.

Cooking method:

  1. Let the dough rest at room temperature for 15-20 minutes to soften it.
  2. Cut off a large piece and roll it into a layer. There should be enough dough to cover the pan and partially cover the sides.
  3. Grease the mold with oil and carefully place the base in it.
  4. Rinse the raspberries thoroughly, arrange them in a layer and sprinkle with sugar. This cooking option also does not involve adding heaps of berries. Otherwise, excess juice will leak onto the sides.
  5. Form strips from the remaining dough and cover the pie with them (diagonally, in squares or in a circle).
  6. Place the pie in an oven preheated to 220°C and bake for half an hour.

Cooking with sour cream

To make the pie with sour cream and raspberries look even more appetizing, it is topped with fudge sugar. Preparing it is as easy as shelling pears, just like the baking itself.

Pie ingredients:

  • raspberries (fresh or frozen) – 300 g;
  • sour cream – 200 g;
  • baking powder – 10 g;
  • eggs – 4 pcs.;
  • sugar – 250 g;
  • butter – 100 g;
  • wheat flour – 300 g;
  • vanillin - to taste.

Ingredients for fudge:

  • sugar – 250 g;
  • water – 75 ml;
  • lemon juice – 7 ml.

Cooking method:

  1. Beat eggs with sugar using a mixer. Without slowing down, add sour cream, melted butter, baking powder, vanillin and flour. Do not turn off the mixer until the mixture is completely homogeneous. This will take about 2 minutes.
  2. Grease a baking dish with oil and pour half of the dough into it. Place raspberries on top. If you are using frozen berries, shake the container well after removing them from the freezer. This will allow you to get rid of frozen ice, which, when melting, can produce a lot of excess liquid.
  3. Pour the remaining batter over the berries.
  4. Place the pie in the oven for 1 hour. For it to bake, 150°C is enough.
  5. While the baked goods are cooking, it's time to make the fudge. Dissolve granulated sugar in water, bring the resulting syrup to a boil, pour in lemon juice. It is important to continuously stir the sweet liquid with a wooden spatula, removing foam.
  6. When the syrup boils, reduce the heat and cover the container with a lid. Cook until it tastes like a soft ball. It’s easy to do: scoop up a little syrup with a clean spoon, cool it with water and roll it with your fingers. If it works, you can turn off the burner.
  7. Place the saucepan in a container with cold water, cooling the syrup to about 40°C. Beat it with a mixer until it becomes white and glossy.

When the pie is ready, all that remains is to slightly heat the fudge in a water bath and cover the top of the delicacy with it.

Shortbread pie with raspberries

Shortbread pie is especially popular due to its crumbly texture. To many, it resembles the basket cakes familiar from childhood.

Ingredients:

  • flour – 220 g;
  • butter – 100 g;
  • egg – 1 pc.;
  • baking powder – 6 g;
  • sugar – 75 g;
  • salt - to taste.

For filling:

  • flour – 200 g;
  • sugar – 100 g;
  • raspberries – 100 g;
  • butter – 150 g.

Cooking method:

  1. Heat the butter until liquid. It is convenient to do this using a microwave oven or in a water bath.
  2. Beat the egg with sugar until it becomes a white fluffy mass, pour in warm (not hot!) oil.
  3. Using a blender, blend the ingredients until smooth. Without stopping beating, add baking powder, flour and salt. The result will be a soft dough.
  4. Grease a baking dish. If you have parchment paper, you can line the container with it.
  5. Spread the dough in an even layer across the bottom of the container. Place in the oven for 15-20 minutes at 180°C.
  6. While the dough is baking, it's time to start making the shortbread crumbs. It will be needed for the filling. Combine flour with sugar. Cut the butter into cubes and add to the dry ingredients.
  7. Rub the butter, sugar and flour by hand until crumbly.
  8. Remove the base of the pie from the oven, place a layer of raspberries on it, and cover with shortbread crumbs.
  9. Send to bake for another 30-40 minutes at the same temperature.

When a delicious golden brown crust forms on top of the pie, it is considered ready.

Cottage cheese treat

Curd pie with raspberries has a rich taste. And its aroma cannot be described at all, it is so tempting.

Ingredients:

  • raspberries – 250 g;
  • flour – 220 g;
  • vegetable oil – 50 ml;
  • cottage cheese – 200 g;
  • sugar – 150 g;
  • baking powder – 5 g;
  • milk – 150 ml;
  • eggs – 2 pcs.;
  • salt, vanillin (vanilla sugar) - to taste.

Cooking method:

  1. Light the oven in advance, heating it to 180°C.
  2. Combine sugar, eggs and vanillin in a deep bowl, bring until smooth for 3 minutes, whisking in any convenient way.
  3. Add cottage cheese to the sweet mass without stopping the beating process.
  4. Pour milk into the mixture, again achieve homogeneity using a mixer.
  5. Sift the flour, mix with baking powder and salt. Mix into the dough in small portions.
  6. Pour sunflower oil into the resulting mixture and mix thoroughly again.
  7. Place half of the dough into a greased pan.
  8. Place most of the raspberries on top. Pour the last part of the dough over the dough and place the rest of the berries on top.
  9. Place the treat in the oven for 45-50 minutes.

For this recipe, the fat content of the dairy products used does not matter.

Yogurt based recipe

Many housewives often cook with kefir or milk rather than with yogurt. Meanwhile, this product is able to give baked goods a special fluffiness and softness.

Ingredients:

  • raspberries – 200 g;
  • flour – 320 g;
  • vegetable oil – 120 ml;
  • natural yogurt – 200 g;
  • sugar – 200 g;
  • eggs – 2 pcs.;
  • baking powder – 12 g;
  • vanillin – 5 g;
  • salt – 2 g.

Cooking method:

  1. In a high-sided container, beat eggs and sugar.
  2. Pour salt, vanillin into it, and pour in yogurt. Beat well again.
  3. Without stopping kneading, add flour and baking powder in small portions.
  4. Pour in vegetable oil and knead the dough again.
  5. Grease the baking pan and spread the resulting mixture into an even layer. Place raspberries on top.
  6. Bake the dessert for half an hour, heating the oven to 180°C.

It is not at all necessary to make a pie with only raspberry filling. You can also combine the tender dough with currants or blueberries, or even create an assortment of berries.
