Chicken liver pancakes recipe with photo. How to cook pancakes from beef liver Liver pancakes from chicken liver recipe step by step

Liver pancakes are easy to make, and they always turn out tasty and fluffy.

Recipe Ingredients:
- carrots - 1 piece;
- liver - 500 grams;
- onions - 1-2 pieces;
- semolina - 4-5 tablespoons;
- chicken eggs - 2 pieces;
- ground black pepper;
-salt;
-vegetable oil.

For pancakes, you can choose beef, pork, chicken or even turkey liver.

Before you start making pancakes, prepare the liver. First, rinse it thoroughly under running cold water. If the liver is beef or pork, free it from the top film, if bird, then cut off the fat. Then pour slightly warm water (about 1.5 - 2 liters) into a deep dish, pour 2 tablespoons of salt into it. Place the offal in a dish of salt water and leave for 30 minutes.
This procedure allows you to remove all toxins from the liver and cleanse the blood. You can also add a little milk to the water - in this case, the liver will become much more tender in taste, and the bitterness will go away.

After the liver is slightly soaked in salt water, transfer it to a colander to drain excess liquid. Then cut into small arbitrary pieces. The liver should be ground through a meat grinder with the smallest grate. To avoid small lumps, you can also grind it in a blender.

Take carrots and onions and peel them. You can, like the liver, pass carrots through a meat grinder or chop in a blender. But with onions it is better to do otherwise. Cut it into small cubes. So the pieces of onion retain their juice when frying, and the pancakes will turn out to be more tender and soft. Transfer the chopped vegetables to the liver mass.

Add some salt and black pepper to taste. Then pour 4 or 5 heaping tablespoons of semolina into the liver dough. Stir so that there are no lumps of semolina left. And put in a warm place, covered with a lid, the dough should be infused for 30-40 minutes. Semolina should swell properly. Otherwise, the pancakes will turn out tough.

After the dough is infused, prepare the pan. Heat it up over high heat and pour some vegetable oil. Then reduce the heat to medium so that the pancakes do not burn.

Take a large tablespoon or small ladle and spread the liver dough into the pan. And fry like the most ordinary pancakes on both sides until golden brown.

Ready-made liver pancakes can be served with a side dish or salad. You can also put on a piece of loaf and serve as a sandwich.

Pancakes with chicken liver: a detailed recipe with a photo:

Let's start with the preparation of the filling.
Lubricate the pan with vegetable oil and put the liver in it. Salt and pepper. Fry over medium heat, do not forget to stir. The liver cooks quite quickly, so 10 minutes of its heat treatment will be enough. You can check the readiness of the meat by cutting a piece of liver in the middle. If the meat has a brownish color and no reddish liquid is released, then the liver is ready.

In another pan, sauté the chopped onion in vegetable oil until translucent. Then add carrots chopped on a coarse grater to it, mix and fry lightly.

The amount of the vegetable component of the filling should be equal in volume to the liver component.
We leave both the liver and vegetables to cool and start making pancakes.
In a saucepan or deep bowl, combine flour, salt, sugar and eggs.

Stir and pour in half of the water and milk. Knead a thick dough. Then pour in the second half of milk and water and, having mixed the dough with a mixer, get a liquid pancake dough.
By consistency, it should be quite liquid, reminiscent of yogurt. Depending on the result, if necessary, add flour if the dough is liquid, or water if it is thick.
Add to the dough 2 tbsp. l. vegetable oil and mix again.

It is necessary to bake pancakes in a heated frying pan with the addition of a small amount of vegetable oil (≈1 tbsp. L.).
Using a ladle, pour the dough into the pan and spread it over its entire surface, making certain circular movements with the pan.

Bake pancake over medium heat for about 2 minutes on each side until a beautiful crust. Flip gently with a wide spatula. Add vegetable oil as needed.

Now back to the cooled stuffing.
The liver must be crushed. To do this, you can use a meat grinder and pass both the liver and the carrot-onion mixture into it. Or just finely chop with a sharp knife.

Liver spring rolls are exactly the dish in which you can safely hide an incredibly healthy, but specific in taste product - the liver, in order to feed it to those who flatly refuse to use it in its pure form. Well, true fans of liver dishes will be simply indescribably delighted with eating this original snack.
