In my family Maslenitsa is a year-round concept! Pancakes are frequent guests on our table. A universal, I must say, dish is Russian pancakes: use it with honey, and with caviar, and with salted salmon, and with all kinds of fillings ... Then your imagination will be enough for that.

Pancake dough is a different story: someone prefers it on water, someone on milk, and someone on kefir, for example.

Personally, I rarely bake pancakes on kefir, but quite often I buy kefir, which "hangs" in the refrigerator for a long time. Today is just that case, so we bake pancakes with kefir :-)

Sugar in the dough - only 1 tablespoon This is perfect for me, because it was these pancakes that I stuffed with sweet and salty filling.

To prepare the dough for pancakes on kefir, we will prepare the products according to the list.

Combine eggs, salt, sugar and baking soda in a bowl.

Add kefir, mix.

Then the turn of flour. Mix with a whisk so that there are no lumps.

Let the dough stand for about 10 minutes. During this time, the dough will become thicker, and it will become clear to you whether you need to add more liquid.

  4. Boil 100 ml of water and immediately pour boiling water into the dough, stirring it at a fast pace. You can continue to use the mixer at this point. You will get a dough that looks like liquid sour cream. If this degree of consistency is not achieved, add the right ingredients- dry or liquid - as appropriate.
  5. Preheat a frying pan (it is better to take a special one for pancakes) and sprinkle with vegetable oil. Fry the rice pancakes, turning over to the other side as needed. To prevent the rice flour dough from showing its fragility unnecessarily, cover the pan with a lid and do not wait until the pancakes are too toasty.
  6. Serving rice pancakes is good for breakfast and as a dessert at any time of the day. Various jams, chocolate and peanut spreads, honey go well with them.
