So, my personal recipes. Over the years, there are more and more recipes, but where do I get them, but everything is very simple: a friend gave it, a neighbor advised it, heard it somewhere, saw it somewhere, invented it myself, in general, with the world on a string.

Salted tomatoes, cucumbers and zucchini




For brine for 1.5 liters of water add 2 tbsp. tablespoons of salt, 4 tbsp. tablespoons of sugar and 1 tbsp. spoon of 9% vinegar, also add black peppercorns, bay leaf and dill when boiling. Put cucumbers, tomatoes, peeled and cut zucchini into half rings in a jar (you can not add zucchini) and fill with brine.

Salted cucumbers


For brine put 2 tbsp for 1.5 liters of water. tablespoons of salt, 3 tbsp. tablespoons of sugar and 1 tbsp. a spoonful of 9% vinegar, also add black peppercorns, bay leaf and dill when boiling, you can add coriander and cloves (to taste). Put cucumbers in a jar and fill with brine.

Tomato wedges with garlic


For brine put 1 tbsp for 1.5 liters of water. tablespoons of salt, 6 tbsp. tablespoons of sugar and 1 tbsp. spoon of 9% vinegar.
Pour 1 tbsp into a sterilized jar. a spoonful of sunflower oil, put the onion chopped into rings down, then chopped tomatoes and a chopped garlic clove on top. Pour brine and sterilize for 15 minutes.

Tomato slices with carrot tops

The same brine , as above for 1.5 liters of water, put 1 tbsp. tablespoons of salt, 6 tbsp. tablespoons of sugar and 1 tbsp. spoon of 9% vinegar. Put the carrot tops in a sterilized jar down, then fill the jar with chopped slices of tomatoes (you can whole, if you have small and neat tomatoes) then fill it in and roll it up 2 times.

Cabbage cubes



Cabbage mode in cubes, three carrots on a grater or cut into rings. You can also add red beets. Well, this is not for everybody, I do not like it, so I do not add it. And we put it in a jar.

For brine add 2 tbsp for 1 liter of water. tablespoons of salt, 6 tbsp. tablespoons of sugar, 3 tbsp. tablespoons of sunflower oil, 2 tbsp. spoons of 9% vinegar, 8 black peppercorns, 2 bay leaves. Boil the brine for 5 minutes, then cool and pour over the cabbage.

Dressing for borscht


Ingredients:

  • 2 kg of white cabbage;
  • 750 g carrots;
  • 1.5 kg of red beets;
  • 1 kg of red tomatoes;
  • 350 g bell pepper;
  • 2 tbsp. tablespoons of salt;
  • 2 tbsp. a spoonful of sugar;
  • 1 glass of sunflower oil;
  • 1 pack of margarine;
  • 0.5 cups 9% vinegar.

Preparation:

We wash the vegetables and peel them. Beets (it is possible without beets, I have it this time without it) and grate the carrots on a coarse or Korean grater. Chop the cabbage into strips. Tomatoes, peppers and onions are sliced ​​mode. Combine all vegetables, butter, margarine in a large saucepan. Then pour in water, salt and add sugar. Cook the vegetable mixture over low heat for 40 minutes. After that, pour into vinegar, mix and cook for another 10 minutes. We lay out the winter borscht preparation on sterilized cans and roll up with metal lids. We wrap the jars and leave until they cool. The next day, we put the blanks in a cool place (although they are perfectly stored in the room). Such a preparation for borscht for the winter is added at the end of cooking to the broth, after the meat and potatoes are ready.

Squash caviar

Ingredients:

  • 3 kg of peeled zucchini;
  • 1 kg of tomatoes;
  • 400 g onions;
  • 400 g carrots;
  • 2.5 tablespoons of 9% vinegar;
  • 2 tbsp. tablespoons of salt;
  • 100 g sugar;
  • 250 g vegetable oil;
  • ground black pepper to taste;
  • 2 pcs. bay leaf.

Preparation:

Zucchini, carrots, tomatoes, onions mince, add salt, sugar, ground pepper, bay leaf. Mix everything and cook for 2.5 hours on low heat. Pour vinegar 10 minutes before the end of cooking. We lay out on sterilized jars and roll up with metal lids. We wrap the jars and leave until they cool. The next day, we put the blanks in a cool place.

Vegetable salad with rice

Ingredients:

  • 2.5 kg of tomatoes;
  • 1 kg of carrots;
  • 0.5 kg of sweet bell pepper;
  • 0.5 kg of onions;
  • 0,5 l vegetable oil;
  • 1 cup rice
  • 2 tbsp. tablespoons of sugar;
  • 2 tablespoons of salt.

Preparation:

Chop tomatoes, peppers, onions, grate carrots. Pour oil into a saucepan and, when the oil boils, add onions, after 5 minutes carrots, after another 5 minutes pepper, then tomatoes, after 15 minutes rice. Mix everything, add salt, sugar and mix again. Put on low heat and cook for 30 minutes. Stir, to be sure, try the rice, if boiled, then put it in jars and close with iron lids, wrap until it cools. If the rice is not ready, then cook until the rice is done. To taste, maybe someone needs to add more or less salt and sugar, I like sweet salads, so try and decide for yourself who to add something to.

Tomato and pepper lecho

Ingredients:

  • 3 kg of tomatoes;
  • 4 things. pepper;
  • 7 cloves of garlic;
  • 1 cup of sugar;
  • 1.5 tbsp. tablespoons of salt;
  • 0.5 cups vegetable oil;
  • 0.5 tsp of ground black pepper.

Preparation:

Pass the tomatoes, garlic through a meat grinder, simmer for 15 minutes, add salt, sugar, vegetable oil and put pepper, cut into strips. Cook over low heat for 20 minutes. At the end, add peppercorns and boil for another 5 minutes. We put it in sterilized jars and roll it up. We put the curled cans upside down, wrap them up (I use a blanket) and leave them to cool completely for 1-2 days.

Pumpkin juice





Ingredients:

  • 3 kg pumpkin;
  • 3 liters of water;
  • 1 glass of sugar (for 3 liters of juice);
  • 1 tsp citric acid.

Preparation:

Peel the pumpkin, cut into cubes, add water and cook over low heat until soft for about 3 hours. Rub through a sieve or grind with a blender. Add 1 glass of sugar and 1 teaspoon of citric acid to 3 liters of juice. Put on low heat for another 15 minutes. Pour into sterilized jars and roll up. Very tasty and uncomplicated, even my finicky grandchildren really like it. This year I have grown a lot of pumpkins, and one is just huge, probably 30 kilograms, so I'll wind up a lot of juice.

Tomato juice

Ingredients:

  • tomatoes;
  • sugar;
  • salt;
  • vinegar 9%.

Preparation:

Wash the tomatoes, peel and cut into several pieces. Place the chopped tomatoes in an enamel pot and simmer for 15-20 minutes. Wipe the resulting tomato mass through a metal sieve. Add 1 tbsp for 3 liters of juice. a spoonful of salt, 3 tbsp. tablespoons of sugar and 1 teaspoon of 9% vinegar. Pour the prepared juice into sterile jars and roll up the lids.

Salted mushrooms




Ingredients for the marinade:

For 0.5 liters of water
  • salt - 4 tsp,
  • peppercorns - 10 pcs.;
  • vinegar 1 tsp;
  • bay leaf - 2 pcs.
Wash the mushrooms thoroughly and boil in water for 10 minutes from the moment of boiling. In the meantime, the mushrooms are boiling, we are preparing the marinade. Put salt, peppercorns and bay leaves in the water. Boil the marinade for 10 minutes, and at the end pour 1 teaspoon of 9% vinegar. The mushrooms have boiled for 10 minutes, then you need to put them in a colander. As the water drains from the mushrooms, we lay them hot in sterilized jars, fill them with marinade and roll them up with metal lids. Raspberry jam


For 1 kg of raspberries, add 1.2 kg of sugar and mix. We leave for 8 hours. Then bring to a boil and simmer for another 5 minutes over low heat. We transfer to sterilized jars and roll up.

Pear jam


Wash the pears, peel, if desired, and cut into pieces. For 1 kg of pear, add 1.1 kg of sugar and mix. We leave for 8 hours. Then bring to a boil and simmer for another 7-10 minutes over low heat. We transfer to sterilized jars and roll up.

Apple and grape compote


Ingredients:

For a three-liter can
  • 3-4 apples;
  • 1 small bunch of grapes, better than Isabella (it will be more fragrant);
  • 250 g sugar.

Preparation:

Put grapes in sterilized jars, cut apples and fill with boiled water, then leave for 10 minutes. Then pour the water from the jar into a saucepan, add sugar, boil for 10 minutes and pour it back into the jar. And we roll everything up with metal lids.

Mix everything thoroughly. Ready dough can be put in the refrigerator for 10-15 minutes while preparing the filling.

Any filling is suitable for this dough: sweet, and from cabbage, and from meat. I made this cake sweet, with apples. Peel the apples and chop finely.

Then we take the dough out of the refrigerator, divide it into two parts, one larger, the second smaller.
First, roll out the larger part. She will go down the pie. Put the rolled dough on a sheet (pre-grease the sheet with vegetable oil), then put the chopped apples.
