Charlotte

Ingredients:

(shape 18cm, sweet and sour apple varieties)
eggs - 4 pcs.
sugar - 300 g
flour - 300 g
baking powder - 1 tsp.
apples - 5 pcs. (600 g)
raisins - 1 cup (155 g)

cinnamon - ½ tsp.
cognac - 2 tbsp. l.
starch - 50 g
vegetable-cream mixture for greasing the mold - 50 g

Cooking method:

Wash the apples, peel and core them.
Cut the apples into 1.5-2 cm slices. Sprinkle the apples with lemon juice to prevent them from darkening. For aroma, add cinnamon and cognac, set aside for 7-10 minutes.
Soak the raisins in warm water for 5-7 minutes. Then dry on a paper towel.
Prepare a baking dish.
Grease the mold with the vegetable-cream mixture, sprinkle generously with starch - so that the charlotte does not stick to the mold during baking and does not burn.
Prepare the dough.
Beat the eggs first without sugar for 1 minute.
Then gradually add sugar and beat until the egg mass doubles in volume.
Add baking powder to flour, mix well. Gradually add flour and baking powder to the egg mixture, kneading the dough with a spoon.
Form a charlotte.
Place flower-shaped apple slices on the bottom of the pan. Sprinkle the apples with starch so that they keep their shape well.
Sprinkle apples with raisins. Pour the dough over the fruit and sprinkle a thin layer of sugar on top. . Cover the pan with foil to prevent the charlotte from burning.
Pierce the foil in several places with a toothpick so that excess steam escapes and the charlotte does NOT become soggy.
Bake the charlotte in the oven at 180°C for 35-40 minutes.
Place the finished charlotte in the mold on a damp, cold towel so that it can be easily removed from the mold.
Turn the charlotte over onto a plate so that the apples are on top of the pie. Serve the charlotte after 15-20 minutes. after baking.

Baked apples with oranges and figs

Ingredients:
apples - 3 pcs. (Simirenko)
oranges - 1 pc.
Figs - 100 g
Cinnamon - ½ tsp.
lemon juice - 50 ml (1 lemon)

Prepare the filling. Peel the orange and cut into 1cm slices. Cut the figs into 0.5-0.7 cm cubes.
Add cinnamon to the chopped fruit and mix everything well.
Wash the apples. Cut off the tops of the apples to leave caps with a diameter of 1-1.5 cm.
Using a spoon, scoop out the centers of the apples. Sprinkle lemon juice inside and around the cut areas of the apples to prevent them from browning.
Cut out the stem of the apple tree cap to create a hole through which excess steam will escape.
Fill the apples with filling. To prevent the apples from cracking during baking, wrap them in strips of foil 1.5-2 cm wide.
Cover with an apple cap. Bake the stuffed apples in an oven preheated to 180°C for 20 minutes.
Serve apples with honey.

Apples in caramel

Ingredients:
apples - 3 pcs. (sweet apple varieties)
sugar - 400 g
water - 50 ml
lemon juice - 50 ml

For decoration:
cinnamon sticks - 3 pcs.
almond flakes - 150 g

Wash the apples and dry thoroughly. Peel the apples and insert cinnamon sticks into the apples.
Cover a wide flat dish with parchment paper, grease with refined sunflower oil- so that the finished caramel apples do NOT stick to the plate.
Prepare caramel. Pour water into a thick-bottomed pan, add lemon juice, then add sugar.
Start cooking the caramel over medium heat. When the caramel boils, reduce the heat and run a silicone brush moistened with water along the side of the pan to prevent the caramel from burning.
Do not stir the caramel during cooking to prevent it from crystallizing.
Cook the caramel for 10 minutes until it has an amber color and a liquid, viscous consistency.
Dip the cinnamon stick apples into the caramel until the caramel completely covers the apple.
Sprinkle caramel apples with flaked almonds. Place the finished caramel apples on a plate.
To ensure the caramel hardens well, set the apples for 20 minutes. in the refrigerator.

Considering that apples are available always and everywhere, they are the most suitable filling for pies. In the old days, apple pies were baked after the harvest, in the fall. They baked in different ways, although the principle, of course, was the same - dough and apples.

You've probably noticed that in American films apple pie is often offered in cafes. You could say that apple pie is a national dish there, even a national symbol. They say in the state of Virginia - it is so.

The classic American apple pie is difficult to prepare, although it is often made from pre-cooked ingredients. No less tasty - sweet pie made from apples baked in dough, the so-called “charlotte”. Getting ready apple charlotte fast and easy. Rumor has it that the name comes from Queen Charlotte, wife of King George III. Or maybe from the word charlyt, which means a dish made from beaten eggs, sugar and milk.

It doesn’t matter where the word charlotte comes from. It is important that the principle is the same: eggs, sugar, flour and apples - delicious apple charlotte.

Ingredients (2 servings)

  • Apples, sweet and sour 1 kg
  • Eggs 8 pcs
  • Sugar 2 cups
  • Vanillin 2 g
  • Flour 2 cups
  • Vegetable oil 1 tsp.
  1. Charlotte is prepared in a baking dish. You will also need a kitchen mixer.

  2. First you need to prepare the dough. Release the eggs into a deep bowl and make sure that no shell fragments get into them. Add sugar and vanilla.

  3. Beat the mixture with a mixer. Beat long enough until you get a thick and dense foam, almost white in color. The sugar should completely dissolve.
