Combine the protein "cream" with the yolk-flour and stir gently with a spoon. It is better to combine until smooth at the lowest speed of the mixer, but so that the bubbles do not leave the dough. And start baking right away.

Lubricate the silicone mold with oil, pour the dough half over the entire surface. Then lay out the filling, then pour the second half of the dough gently over the entire surface of the filling. I baked it on the second shelf of the oven, not on the first (under the roof), at 200 degrees, for about 40 minutes. I took it out and left it in the form to cool down to a warm state. So better pie it will come out of the mold. Here it turned out to be so golden, this is its bottom.
