Mix all the ingredients and pour over the previously prepared dressing.

Step 1: prepare the squid.

First of all, we prepare the squid; if you bought already cleaned fresh carcasses, you’re lucky, but if not, then you’ll have to work with them a little. We turn on two burners to high heat, put a full kettle with regular running water on one, and a small saucepan with purified water on the second.
Next, put the squids in a deep bowl and after a while pour boiling water from the kettle over them. In just a few seconds, the film-skin on the surface of the seafood will curl up and easily come away from the meat.
As soon as this happens, immediately transfer the carcasses to a bowl of ice water and allow them to cool slightly. After this, we rinse again, simultaneously removing the remaining skin and removing the insides with the notochord - the transparent spine. Then we dry the squid with paper kitchen towels and proceed to the next step.

Step 2: cook the squid.

After the water in the saucepan boils, add about a tablespoon of salt, very carefully lower the seafood and cook them for no more than three minutes. You cannot overexpose this ingredient in hot liquid, as this will make it hard and lose its taste!

After the required time has passed, transfer the finished squid to a bowl with clean cold running water. Cool them, dry them again, place them on a cutting board, and using a sharp kitchen knife, cut them into rings or thick strips from 3 to 5 millimeters and send it to the salad bowl.

Step 3: prepare the vegetables.

Now it's time to tackle the vegetables. Peel the onion and wash it together with the tomato and herbs under running water. Then we dry them with paper kitchen towels, place them one by one on a clean cutting board and chop them.
Chop the onion into strips. Remove the place where the stem was attached to the tomato and cut it into thin slices or cubes. Leave the sprigs of dill or parsley whole and set them aside, and send the prepared vegetables to the salad bowl with the squid.

Step 4: bring the dish to full readiness.

To prevent the salad from turning out bland, season it with black to taste. ground pepper, mayonnaise and salt. Add the last ingredient very carefully! Don't forget that the squid was boiled in salted water. Next, mix all the products with a tablespoon until smooth and serve the finished dish to the table.

Step 5: Serve the squid salad with tomatoes.

Squid salad with tomatoes is served immediately after preparation. It is served in a salad bowl or in portions on plates, optionally decorating each with sprigs of herbs, lemon and tomato slices. The taste of this dish is pleasant, rich, moderately spicy and quite delicate. Enjoy!
Bon appetit!

If you decide to make the salad later, you can prepare the squid ahead of time. Clean the carcasses as indicated in the recipe and place in the freezer. There they can be stored for 1.5 months without losing their taste;

Frozen squid should be allowed to thaw completely before cleaning. It is better to fill them with cold water, leave them in this form for 35–50 minutes and then prepare them based on the above instructions;

The set of vegetables can be supplemented with lettuce peppers, canned corn or fresh cucumber;

If you still overexposed the squid in boiling water and its meat became rubbery, don’t worry! Boil the seafood for another 30 minutes, after this time they will become soft, although there will be practically no nutrients left in them.

Previously, the entire modest list of our salads could be easily divided into two categories: “regular” and “for the holiday”, and even the holiday ones were very conditional, because the choice of products was poor for both.

Today, fortunately, it is not at all necessary to wait for a special occasion and you don’t even have to spend a lot to cook an unusual and delicious salad. Just one non-standard ingredient can completely change the entire appearance of a dish, and today’s salad with squid, tomatoes and cheese is a good example of this. A little properly prepared seafood, a couple of spoons of balsamic vinegar - and now you have an original treat with an exquisite and noble taste.

Ingredients:

  • 400 g frozen squid;
  • 3 tomatoes;
  • 200 g cheese;
  • balsamic sauce.

Recipe

1. Prepare all the listed products for preparing the salad. Let the frozen squid thaw in warm water (the carcasses should not be placed in strong hot water, as the meat will turn pink).

2. Next you need to cook the squid. To do this, remove the thin skin from the thawed carcasses (it looks like a transparent film) and place the seafood in slightly salted boiling water for 2 minutes, after which we immediately remove it. If you cook the squid longer, it will become rubbery. Cut the cooked squid meat into thin strips.

3. Cut the tomatoes into cubes, drain the excess liquid and place the tomato in a container with the prepared squid.

4. Grate cheese into a salad bowl with the rest of the ingredients (it’s better to choose from durum varieties, it will be easier to grate it).

5. Squid salad with tomatoes can be served by simply mixing the ingredients and pouring balsamic sauce on top.
