I have already said more than once that I love and enjoy preparing various casseroles. Today I want to offer another type of casserole with meat, which in its appearance and method of preparation is quite reminiscent of a pie, which is why it deserves its name.

I once found this recipe on the Internet and since then I have often prepared this delicious jellied pie for your family. In the original version, the recipe calls for pickled champignons, but we didn’t really like it with them, so I only make it with fresh mushrooms, but as they say, it’s a matter of taste. So, let's begin...
First, let's prepare the filling. Rinse the rice (you can use any rice, I use steamed rice) in several waters and boil until tender in salted water...

Remove the beans (I used frozen ones) from the freezer and put them aside for now...

Champignons, if fresh, rinse and cut into slices. I have frozen ones, all I have to do is defrost them. Fry in a frying pan for a couple of minutes, not forgetting to add a little salt...

Then we put them aside, and put the onion, cut into quarters, into the same frying pan and fry until transparent...

Add grated carrots to the onion and fry for another 2 minutes...

Then lay out the minced meat (I used chicken, but you can use any), add salt to taste and spices. Fry until done, stirring occasionally...

Cheese for three fine grater. That's it, the filling is ready...

Now let's do the dough. Beat eggs into a cup...

Pour kefir over them...

And mix. Then add salt...

Soda...

And flour...

Mix thoroughly and get a dough with a consistency almost like pancakes...

Now take a mold (mine is 26 cm) and cover the bottom with baking paper so that the cheese remains on the pie. Place mushrooms on paper. At that time, I had a little less mushrooms than indicated in the recipe, so the layer turned out to be quite sparse, but in general, the more mushrooms and cheese, the tastier, so I advise you not to skimp on them...

Place the second layer of cheese...

The next layer is rice...

Then minced meat...

And put the beans in the last layer...

If desired, you can salt the desired layers to taste. Fill all layers with dough on top...

Place the pie in a preheated oven for 40-50 minutes at 175*C. I usually go by the redness of the top...

Let the cake stand for about 20 minutes, and then turn it over onto a suitable dish and carefully remove the parchment...

So, let's prepare a delicious, multi-layer pie with minced meat and mushrooms in the oven.

Ingredients

For kefir dough:

  • 3 eggs
  • 1.5-2 cups wheat flour
  • 1 cup yogurt or kefir
  • 1 partial tsp. baking soda
  • about 1 tsp. salt

For filling:

  • 400 g minced meat
  • 400 g fresh champignons
  • 200 g green beans
  • 4 medium sized onions
  • 150 g processed cheese (can be replaced with hard cheese)
  • 1 partial tsp. baking soda
  • 2 eggs
  • salt and pepper to taste
  • odorless vegetable oil for frying

  1. First of all, let's prepare the filling for the upside-down. To do this, wash the mushrooms well in warm water.
  2. Cut the champignons into slices and fry them in a small amount of vegetable oil.
  3. Cut 2 onions into half rings and add them to the champignons in the pan as soon as they begin to brown. And fry ready. Then add a little salt and pepper.
  4. Line a baking dish with baking paper. Place fried mushrooms and onions. Throw pieces on top processed cheese or hard, which will give a special taste to the whole pie.
  5. Next, beat 2 eggs with a pinch of salt and ground pepper, and pour in our mushroom layer - this will make it even more pronounced.
  6. Now it's the minced meat's turn. Pork or turkey are perfect for this type of pie - both options are good. You choose minced meat according to your taste. So, fry the minced meat with a drop of oil.
  7. Chop the remaining 2 onions into small pieces and throw them into the frying pan with the minced meat. Leave on the stove until the minced meat is ready. Then salt it and pepper it a little. And put it evenly in the mold with the next layer after the mushrooms and cheese.
  8. We lay out the next layer of green beans, which before this need to be boiled a little in slightly salted water for about 7 minutes, until they become soft.
  9. The layers are ready. Now the dough. Pour kefir into a container (it is advisable to take it deeper) and drive in the eggs.
  10. Add the required amount of soda and salt.
  11. Add flour and knead the dough. Don't be alarmed that it turns out a little liquid - that's how it should be.
  12. So, fill our filling with the finished dough.
  13. We put the form with our future upside-down in the oven for 30-40 minutes. Temperature – 180.
  14. Cool the finished pie slightly.
  15. Then we turn it over.
  16. Cut into delicious thick pieces and serve.

It is believed that one of the sisters, while preparing the dessert, forgot to put in the dough and placed the apples and sugar directly into the mold. When the mistake was discovered, the woman decided to correct the situation and placed the dough on top of the filling. And when serving, I turned the dessert over with the apples and the caramel formed from sugar facing up. The guests liked the new version of the pie so much that they started making it all the time. And over time, the recipe spread throughout the world.

To prepare Tarte Tatin, you will need a small set of ingredients:

  • 200 gr. flour;
  • 100 gr. butter for dough and 120 gr. For filling;
  • 1-2 tablespoons of regular cold water;
  • 800 grams of apples;
  • 5 tablespoons of sugar;
  • 2-3 tablespoons of lemon juice;
  • 0.5 teaspoon ground cinnamon.

Let's start by preparing the dough. Take the butter out of the refrigerator and cut it into cubes. Place in a deep container. Sift the flour on top and quickly rub with your hands until you obtain a homogeneous crumb.

Add water and quickly knead the dough. First, pour in 2 tablespoons of water and start kneading; if there is not enough liquid, then gradually add more water. The dough will probably turn out soft, but elastic, and will lag behind your hands. Do not knead for a long time; the warmth of your hands will cause the butter to melt and the dough will begin to “clog” with flour. Wrap the dough ball in film and place it in the refrigerator on the top shelf.

Now we begin preparing the filling, consisting of apples and caramel. Place soft butter in a frying pan and mix with sugar and cinnamon. Then put on low heat and melt. Do not stir the mixture with a spoon, only occasionally shake the pan to mix the mass.

Advice! To make caramel, use a pan without plastic parts so that it can be used to bake the cake in the oven.

Peel the apples and cut them into 8 thick slices. As soon as the sugar turns light yellow, add apples to the sweet mixture. Continue to simmer over low heat for 10-15 minutes. The apple slices need to be turned over so that they are covered with caramel on all sides.

Advice! It is very important not to overheat the caramel, otherwise it will start to burn and the dessert will turn out bitter.

Remove the pan from the heat and let the apples cool slightly. We take the dough out of the refrigerator and open it into a layer whose diameter is slightly larger than the diameter of the mold. Carefully cover the apples with dough, trying to tuck the edges of the cake along the sides of the pan, that is, we form something like an inverted bowl.

Pierce the dough in several places with a fork. And we send the workpiece to a well-heated oven (recommended temperature - 190 degrees). Baking time is about 40 minutes.

Cover the finished dessert with a dish and turn it over so that the apple-caramel filling is on top. Decorate the dessert with powdered sugar and mint leaves.

This dessert is no less popular and also has a beautiful history. There is a legend that the dessert was invented by a young English pastry chef in love with a girl named Charlotte. To please his beloved, the guy came up with a beautiful and delicious dessert and named it after his bride.

It must be said that classic charlotte was prepared from white bread, soaked in wine or syrup. They were laid out in a mold, layered with fruit, and filled with a mixture of eggs and milk. Later, in French pastry shops they began to serve charlotte “a la russe” (Russian charlotte), for its preparation they used not bread, but biscuits, layered with fruit and cream.

Later they began to call it charlotte sponge cake with apples. It can be prepared using the flip-flop principle.

To prepare one of the charlotte options you will need:

  • 5-6 apples;
  • 150 gr. flour;
  • 150 gr. Sahara;
  • 10 gr. vanilla sugar;
  • a pinch of salt;
  • 0.5 teaspoon cinnamon;
  • 4 eggs;
  • 30 gr. sour cream;
  • orange zest.

Turn on the oven to preheat to 180 degrees. Prepare the pan by cutting out a circle of parchment to fit the bottom of the pan. Grease the paper with oil.
Cut the apples into thin slices. Place it nicely on the bottom of the mold. Don't forget that this will be the top of the pie, so you need to lay it out as carefully as possible.

Now let's start preparing the dough. Break the eggs, mix them with salt, regular and vanilla sugar. Beat with a mixer for about five minutes. If you beat it by hand, you will have to use the whisk for at least 15 minutes.
Sift the flour directly into the bowl with the fluffy mixture, mix, add orange zest and rich thick sour cream. Pour it out ready dough on top of the apple slices, leveling.

Place in the oven for 35-40 minutes. Take out the finished dessert, cool it a little and turn it over onto a plate.

Lenten upside-down apple pie

Let's prepare the products:

  • 3 apples;
  • 1.5 cups flour;
  • 3 tablespoons of sugar for the dough and 2 tablespoons for making caramel;
  • vegetable oil – 0.5 cups, choose an odorless product;
  • 2 tablespoons honey;
  • a teaspoon of baking powder;
  • 0.5 teaspoon cinnamon;
  • 1 tablespoon of water.

Peel the apples and cut out the seed pods. Grate one apple and cut the rest into slices.

Add three tablespoons of sugar, cinnamon, and butter to the grated apple. Mix. Then add flour and baking powder. Knead apple dough.

Mix water, sugar and honey in a saucepan. Heat over low heat until the sugar is completely dissolved and the caramelization process begins. This will take about 5 minutes.

Pour the caramel into a greased ceramic or glass dish, and then lay out the apple slices, dipping them into the caramel. Place the apple dough on top of the apples, carefully spreading it over the surface.

From puff pastry

It's easy and simple to make a puff pastry upside-down. If, of course, you buy it ready-made in a store, and don’t try to cook it yourself classic recipe. We will bake the cake in a square or rectangular shape.

We will need:

  • packaging of puff pastry without yeast;
  • about 1 kg of apples;
  • 120 gr. butter;
  • a quarter glass of sugar;
  • 0.5 teaspoon of cinnamon;
  • several cherries, cranberries or lingonberries (for decoration), you can take frozen berries or from jam.

We peel the apples, carefully cutting off the skin in a thin layer, cut out the seed pod with a special knife, leaving the apple whole. If you don’t have a special knife, you can cut out the seeds with an ordinary, but long and thin knife. Cut the apples into round “washers” about 1 cm thick.

In a thick-bottomed saucepan or frying pan, cook the syrup, 3-4 tablespoons of water and half a glass of sugar. We wait until the caramelization process begins (the color of the syrup becomes light beige). Pour the syrup into the mold in which we will bake the upside-down.

Carefully place the apple “washers” into the hot syrup in even rows. Sprinkle with cinnamon and remaining sugar. Place slices on top of apples butter, distributing it over all surfaces of the mold.

We roll out the puff pastry according to the size and shape of the baking dish, the thickness of the layer should be about 0.7 cm. We cover our apples, tucking the edges of the layer along the sides of the mold inward, as if wrapping the filling with dough. Prick the dough layer thickly with a fork and place the pan in the oven. Bake for about 30 minutes in the oven (at 180 degrees). The dough on top should be browned. Let the dessert cool slightly and turn it over onto a plate. To make our dish especially beautiful, we insert a berry into each hole of the apple “puck”. The top of the dessert can be sprinkled with powdered sugar.
