Meat for the Easter table

Can a holiday be complete without meat? Yes, not a single table can do without this. Meat can be served in any form - be it smoked, or baked, stewed, fried, or anything. You can’t live without meat, the table won’t be complete).

Beautiful assorted cuts for the table

Sliced dishes are usually placed on the table along with salads. It is considered a light snack. As a rule, it should be prepared half an hour before it goes to the table.

It can be made from smoked, half-smoked, boiled sausage, with ham or with your favorite smoked meat. Typically, the meat on a plate is sorted into several types, supplemented with cheese, and decorated with vegetables and herbs.

I offer you several cutting design ideas.

1. You can make a rose in the middle like this - fold it in a row, placing several pieces of cutting on top of each other and from the edge start twisting it all into one roll. When you twist it, fasten it with a skewer just below the middle so that the roll does not unwind and place it on a plate, and spread the petals beautifully on top. Next, simply cover the rose with the rest of the cutting.

2. Or something like this. There's a rose in the middle from smoked sausage. It rolls up using the same principle.

3. If the slices are soft, they can be folded in half and laid in a circle in several rows.

4. And here is the already familiar rose and a bow made of thin bacon. Pieces of bacon are folded in half, make a bouquet and fasten at the bottom with a skewer.

5. A few more ideas.

You can style it however you want and with anything, as long as you have enough imagination or use my ideas.

Well, that's all. I wish you a great celebration of this Great Holiday. Write comments if you liked my menu)) All the best.

This Sunday, April 8, all followers of the Orthodox Church will celebrate one of the most important religious holidays of the year - Easter. Preparations for Easter begin a week before the holiday itself: cleaning the house (Maundy Thursday), preparing some dishes and painting eggs. People try to organize everything in such a way that on the holiday itself they do not do any work, but devote themselves to the celebration and, of course, attending church services.

The main ritual dishes for Easter are eggs painted in different colors, Easter cakes and Easter cottage cheese.

Painted eggs are a direct symbol of the tomb and resurrection of Christ. A dead shell on the outside and life on the inside. Traditionally, eggs were painted red, symbolizing the blood of Christ, but later the custom of painting eggs in different colors and even artistic painting on them came. In the world today there are numerous museums of the so-called Easter eggs - painted eggs. This, of course, is no longer food, but real art. At home, eggs are most often colored by boiling them in onion skins, giving them a characteristic brown color. It is customary to bless such eggs in church before eating them. By the way, it is customary to paint eggs in advance - a couple of days before Easter itself, and even a week after it.

My late grandmother told me how in Belarusian villages they started collecting eggs for Easter almost a few weeks before the holiday, and on Bright Sunday they walked down the street, filling their pockets full of them, and bumping into each other. This game was called “Christ”, and the winner in it was the one whose egg did not break as a result of the battle. He also took the winner’s egg for himself. After the holiday, when the number of eggs in the house did not allow them to be eaten in their pure form, okroshka and green cabbage soup were prepared from them.

“The egg applies to all creatures,” says an ancient handwritten interpretation attributed in ancient times to St. John of Damascus, “the shell is like the sky, the chaff is like the clouds, the white is like water, the yolk is like earth, and the dampness in the middle of the egg is like the world.” sin".

Another well-known symbol of Easter is Easter cake. Easter cake- this is a special type of ritual holiday bread, which is traditionally baked from yeast dough on Maundy Thursday, that is, two days before Easter. On Saturday, on the eve of the holiday, it is also consecrated in the church. Kulich is a semblance of church artos - large leavened bread, its folk, “homemade” variation. In Russian practice, artos is a tall cylindrical bread, consecrated on the first day of Easter at the liturgy after the prayer behind the pulpit, which is distributed to believers on Bright Saturday after reading the prayer and crushing.

Cooking Easter cake is also a real sacrament in itself. Its main feature is not the ingredients, but the correct cooking technology. You should start preparing Easter cake only in a good mood, then the Easter cake will turn out successful, and next year everything will be fine in the house.

Curd Easter- another central dish of the festive Easter table. To prepare cottage cheese Easter, you need a special detachable Easter pan in the shape of a truncated pyramid, consisting of 4 planks. The curd mass is placed in a pan and pressed, taking the form of a truncated pyramid, which symbolizes the place of the crucifixion and death of Christ. Among other things, curd Easter is an excellent curd dessert with the addition of dried fruits and nuts, which will appeal to both adults and children.

In general, Easter is considered a collective holiday. It is celebrated widely and cheerfully - with festivities, egg fights and obligatory treats for friends and neighbors. On this day, they certainly bake a lot of pies, buns, buns and other sweet dough products and give them to all nice people. The more generous you are on Easter, the more successful the next year will be for you. Joy must be shared with loved ones, not forgetting, of course, those in need. The very ritual of congratulating Easter, when people kiss each other on the cheeks three times, saying “Christ is risen,” shows us that kindness and attention to others are important elements of the holiday.

And, of course, in addition to pastries and desserts, the festive table must certainly be filled with main dishes that will please the eye and stomach. Here is a sample list:

  • aspic and aspic (and Easter in Slavic countries does not always fall on warm spring days; sometimes there may still be snow on Easter);
  • baked poultry (whole baked chicken, duck or goose is one of the main delicacies of Russian and not only Russian cuisine);
  • boiled pork and sausages (where would we be without meat? Cattle used to be slaughtered especially for Easter);
  • vegetable salads (if Easter coincides with the active onset of spring);
  • pickles (remnants of winter stocks, if fresh vegetables have not had time to ripen);
  • pies with a wide variety of fillings;
  • homemade wines;
  • sbitni.

To put it simply, at Easter it was customary, and still is today, to put on the table all the best and most delicious things that are in the house. There is no better occasion for a housewife to show off her culinary skills than Easter. After all, before that there was a grueling Lent, and after that the spring suffering will begin, when there will be no time for the holidays. So Easter is such a reason to stop, have fun, relax after winter and get back to work. Easter is the king of days, as the saying goes.

On April 16, 2017, the Holy Resurrection of Christ or Easter is celebrated - the most important event for all Orthodox Christians.

The general holiday is celebrated within a week. During this period, the gates of churches are not closed; the Easter service has special significance. After it, all relatives and friends sit down at the table. Therefore, you need to think about its decoration in advance.

How to celebrate Easter. Traditions and customs

Orthodox preparations for Easter

Before this great holiday, it is customary to cleanse the soul and body. The fast lasts for forty days, during which believers not only cut down their diet, but also prepare spiritually. It is not appropriate to think about bad things, use foul language, or swear. Naturally, this is unnecessary to do on ordinary days, but during this period you need to take extra strict care of yourself.

During Lent, Christians pray fervently, atone for their sins and those of their loved ones, work hard, and think about understanding the meaning of their lives.

The last week before Easter is the most difficult. Every day is special and has its own traditions. Our ancestors got up very early these days in order to have time to complete all the necessary work. On the first day of the week they whitewashed the walls and sowed in the garden. In the second, they washed clothes and prepared outfits for the holiday. On the third day we finished work in the garden and in the house. In the evening the dough for Easter cakes was put out. The girls were selecting eggs to paint.

On Maundy Thursday it was necessary to swim before sunrise. Housewives were busy baking Easter cakes and painting eggs. On the same day, willow branches were blessed.

Good Friday is the hardest day. You need to talk quietly, you cannot shout or swear. Until the shroud is taken out in church, adults are not allowed to touch the food.

Saturday is a harbinger of joy. Believers prepare baskets of eggs and Easter cakes and go to the service, which will last all night.

Traditional Easter table

After the service, Orthodox Christians go home and prepare a festive table. According to the number of days of fasting, 48 dishes should be prepared. The main place on the table is given to Easter cake and Easter. Paints are laid out around them.

In addition to the symbols of the holiday, a large assortment of cold appetizers from meat, fish and vegetables is prepared. The table on this day should be set from morning to evening. This is done so that anyone can come into the house and share the joy of this day with you.

Easter table symbols

Easter cake - the heart of the holiday table

The feast begins with products that are blessed in the church. These include Easter cakes and colored eggs. But they don’t bless chicken. According to legend, she kept Jesus awake when he was a baby. Kulich is associated with the body of the Lord, who accepted suffering for us.

Curd Easter- a symbol of heavenly life. It must be prepared in the shape of a pyramid, truncated at the apex. It symbolizes the shape of the tomb where Christ was resurrected. On one of its surfaces the letters XB (Christ is Risen) are depicted.

Why are eggs painted for Easter?

What does the Easter egg symbolize?

In Palestine, graves were located in caves, and the entrance to it was closed with a stone. According to legend, the entrance to the tomb of Jesus was closed with an egg-shaped stone. Traditionally, eggs are painted red, which symbolizes the blood of Christ and his suffering.

Mary Magdalene, according to legend, notified the Roman emperor about the resurrection of Jesus. As an offering, without which it was impossible to appear, she took an egg. Since new life is born under its shell, it was a symbol of life. The Emperor did not believe her. He said that before it turns red, the deceased will be resurrected. The egg actually turned red.

2019. According to long-standing traditions, it is on this day that Lent should end and the Resurrection of the Lord should be celebrated at a sumptuously laid table.

If you don’t have a proven one yet, today we will tell you about what is worth putting on the holiday table on this day.

More recently, we already wrote about if you adhered to it. Taking into account our recommendations, you should not cook too much for Easter, and subsequently eat everything that is on the table.

What should be on the table according to tradition?

Painted eggs and pysanky . According to legend, the Easter tradition dates back to the times of Mary Magdalene and the Roman Emperor Tiberius. Since then, eggs have been painted natural dyes in different colors, and modern housewives use different stickers.

Meat dishes . It ends, during which it was forbidden to eat meat products, and at Easter, according to tradition, there must be meat on the table. If you actually abstained from using meat products 40 days, then you should not cook fatty foods meat dishes. The best way to break the fast would be chicken, young veal or turkey. It is better not to fry meat for Easter, but to bake or stew it with mushrooms or vegetables. If you did not fast, you can prepare for festive table traditional pork or boiled pork, meat casserole, meat rolls or meat on the bone. Jellied meat lovers can indulge their souls and taste their favorite dish, the main dish of which can be chicken, pork, turkey or beef tongue.

Fish dishes . Housewives often prepare fish dishes for Easter, especially if household members are not against such a treat. Fish is the ideal option for breaking fast according to all the rules. Its tender meat will not put much strain on the gastrointestinal tract, liver and pancreas. Bake the fish in the oven, stuff it or cook it in pots. For Easter menu choose salmon, trout, silver carp, salmon, mackerel, cod or any other fish to your taste.

Salads . Easter is a spring holiday, so we recommend preparing light salads with the first vegetables and herbs. Feel free to choose cucumbers, radishes, cabbage and lettuce, apples, Bell pepper, green onions and dill. Add nuts, seeds, cheese, olives, flaxseed or olive oil, or sour cream as a dressing. It is better to avoid heavy salads with mayonnaise on this day, because after fasting it will be difficult for the body to cope with a large amount of fat.

Snacks . It is customary to serve various appetizers before the main course, and the Easter table should be no exception. Fresh vegetables, stuffed with the most delicious ingredients, mixes of fish, eggs, cheese, ham, vegetables, fruits, berries and herbs, served in various variations, will decorate your holiday menu for Easter. These dishes may not be a very traditional choice, but if you love them, then why not?
